Reconstruction
In September 2010, Philips presented its Airfryer in Berlin during the IFA consumer-electronics and household-appliance fair. The appliance did not invent forced-air cooking: convection ovens were established technology, and a 1987 United States patent had already described an “air fryer” using a heater and high-velocity recirculating air. What the 2010 launch accomplished was to package intensified convection in a compact, basket-based appliance and market it directly as a practical alternative to deep-fat frying.
The first Philips model combined rapidly circulating hot air with heat from an upper grill element. Food sat in a removable chamber through which the air moved, promoting fast surface drying, browning and crisping. Its controls provided temperatures up to 200 °C and cooking times of up to 30 minutes. The launch material emphasized French fries but also named chicken nuggets, meat and tempura. Fresh potato fries still benefited from approximately half a tablespoon of oil, while frozen fries generally already contained oil from industrial prefrying. “Oil-free frying” was therefore more advertising shorthand than a universal description.
The technological problem was familiar: deep frying rapidly browns food but requires a reservoir of hot fat, while microwaves heat quickly without reliably producing a dry, crisp crust. A small, powerful convection chamber offered a compromise. It could crisp breaded or par-fried convenience foods with little additional oil, reduce the handling and disposal of frying fat, and serve as a compact oven for roasting, grilling and baking. Results nevertheless depended on food composition, crowding, airflow, temperature and any oil already present.
Commercial adoption was unusually rapid. Philips reported sales of more than one million units in less than two years. It also documented adaptation to regional foods, including chicken samosas in India, chicken wings in China and chocolate cake in Britain. By 2015 the company reported five million Airfryers sold and leadership in the low-fat-fryer market. These corporate figures strongly support mass-market diffusion, although they do not measure the entire appliance category.
Research available by 2015 suggested that air-fried potatoes could contain substantially less absorbed fat than deep-fried equivalents. One controlled study also reported markedly lower acrylamide under its particular air-frying conditions, but later experiments have produced variable comparisons; no universal safety advantage should be inferred. The air fryer’s durable significance lies instead in changing consumer expectations. It reframed countertop convection as “frying,” linked the appliance to frozen and ultra-processed convenience foods as well as fresh ingredients, and helped make rapid reheating and small-batch crisping routine domestic practices.

Berlin’s 50th IFA embodied the convergence of household appliances with digital consumer technology. Held from September 3 to 8, 2010, it drew about 235,000 visitors and 1,423 exhibitors from 47 countries across approximately 134,400 square metres. Prominent themes included internet-connected televisions, mobile media, LTE, energy efficiency and the emerging connected home. The Airfryer entered kitchens already shaped by microwave ovens, frozen foods and global appliance supply chains, but it gave high-powered convection a new consumer identity centered on crispness and reduced use of added frying oil.
