Cast-Iron Cooking Vessels Spread in China

Between the Warring States era and the Han dynasty, iron casting became part of a large and increasingly organized Chinese production system. Cast iron itself appeared before 500 BCE, but the centuries covered by this card witnessed wider manufacture, technical diversification, and distribution. Henan was one important center. Workshops at locations including Yangcheng, Tieshenggou, Guxingzhen, Wafangzhuang, and the Zhengzhou region preserve furnaces, moulds, slag, and iron objects associated with this developing industry.

The central innovation was the production of carbon-rich iron in a molten state. Metal could be poured into ceramic moulds, allowing founders to reproduce standardized forms more readily than smiths could by forging each object. By the late fourth and third centuries BCE, reusable moulds were employed for some iron products. Cast iron was hard but often brittle, so craftspeople also developed controlled cooling, annealing, and decarburization processes. Those treatments were particularly important for tools requiring toughness; cooking containers could instead be cast as white, mottled, or gray iron, depending on composition and cooling conditions.

Archaeological and metallographic evidence confirms iron kettles, pots, and cauldrons in Warring States-to-Han contexts, including examples from Nanyang in Henan and Han vessels analyzed elsewhere in China. Such containers could support established methods of boiling, simmering, and steaming, including the use of a lower cauldron beneath a perforated steamer. Contemporary or near-contemporary texts describe a sophisticated cuisine involving boiled and steamed grains, broths, meat, sauces, roasting, and frying. The evidence does not, however, demonstrate that every such technique depended on cast iron: pottery and bronze vessels remained in use, and access differed by region and household wealth.

Under the Han, iron production became entangled with imperial finance and administration. Emperor Wu’s government imposed a state iron monopoly in approximately 117 BCE, although its scope and chronology varied. Large works near cities produced tools and other standardized goods, while iron objects and technology circulated into frontier regions. This industrial infrastructure probably made utilitarian ironware more available, but the precise proportion of households owning iron cookware cannot presently be calculated.

The strongest modern connection is therefore not a direct line from a particular Han vessel to today’s wok, but a durable Chinese tradition of casting iron for practical cookware. Thin cast-iron woks belong securely to much later history, and Han stir-frying remains debated. Nevertheless, early founders established the technical foundation for inexpensive mould-cast vessels that could withstand repeated heating and be produced at considerable scale—a legacy still recognizable in Chinese iron pots, cauldrons, and woks.

Historical context

Competing Warring States kingdoms were replaced by the unified Qin empire in 221 BCE and the Han empire from 206 BCE. Henan occupied the densely settled Central Plains and contained major capitals, markets, and metallurgical centers. The Han census of 2 CE registered about 57.7 million people and 12.4 million households, although it did not count every inhabitant. State intervention in iron intensified around 117 BCE, linking workshops, urban demand, taxation, agriculture, military supply, and long-distance distribution.
