Reconstruction
At Tell al-Ubaid, a small settlement near the powerful Sumerian city of Ur, excavators recovered fragments of an elaborate dairy scene from the Early Dynastic Temple of Ninhursag. Usually dated to about 2500 BCE, the inlaid panel shows cattle, calves, milkers, vessels, and workers handling liquid. It is among the earliest unambiguous visual representations of milking in Mesopotamia and offers an unusually concrete view of dairy labor associated with a temple establishment.
The surviving scene depicts cows milked from behind, with calves positioned near their mothers. Keeping a calf close can encourage milk let-down and steady the cow, although the panel cannot reveal every practical detail. Elsewhere in the composition, workers manipulate a large vessel and pour liquid through what appears to be a funnel or strainer into another container. These actions demonstrate processing, but they do not identify the finished food beyond dispute.
Early excavators described the sequence as churning, straining, and storing butter. That interpretation remains plausible: agitating milk or naturally soured cream could separate fat granules, which could then be collected while the liquid buttermilk drained away. Scholars have also proposed that the scene represents souring milk, transferring it safely, or draining curds during cheese production. No residue analysis from the depicted vessels is available to decide among these possibilities. The strongest conclusion is therefore that the panel records organized milking and secondary processing, with butter or butterfat a probable rather than directly observed product.
Processing was especially useful in southern Mesopotamia’s warm environment. Fresh milk spoils rapidly, whereas fermentation, curd separation, and conversion into concentrated fat can extend usability and make dairy easier to store, transport, measure, or distribute. The exact shelf life of the products shown is unknown, and the image does not establish whether salt, heating, or deliberate starter cultures were employed.
The temple setting gives the scene broader significance. Ninhursag was associated with fertility and livestock, while Mesopotamian institutions managed land, animals, workers, and food deliveries. Later third-millennium administrative tablets securely record cheese and a product translated as butter oil or butterfat, demonstrating that dairy products eventually became accountable institutional commodities. Those later texts support the technological plausibility of the scene but do not label its individual actions.
Modern butter, cultured butter, buttermilk, cheese, and clarified butter still depend on the same general strategies of fermentation, agitation, separation, and concentration. The al-Ubaid panel cannot prove a continuous recipe extending to any particular modern product. Its defensible legacy is instead the early documentation of people turning highly perishable milk into more manageable foods through specialized labor and containers.
Historical context
Southern Mesopotamia was divided among competing urban states such as Ur, Uruk, Lagash, and Umma. Irrigated fields supplied barley and livestock fodder in a landscape with little timber, stone, or metal. Temples and elite households coordinated substantial agricultural estates and recorded goods through cuneiform accounting. Ur’s imported lapis lazuli, carnelian, metals, and marine shell reveal exchange networks extending hundreds or thousands of kilometers toward Iran, Afghanistan, the Gulf, and neighboring regions. Tell al-Ubaid stood roughly seven kilometers west of Ur and was closely connected with that city’s First Dynasty.
