In 1967, Clinton Corn Processing Company in Clinton, Iowa, began commercially shipping a new kind of corn sweetener. Its Isomerose product contained roughly 14–16 percent fructose, compared with the predominantly glucose composition of conventional corn syrup. The company followed in 1968 with a syrup containing about 42 percent fructose. This was not yet the beverage-dominating ingredient later familiar to American consumers, but it demonstrated that enzymatic conversion could operate beyond the laboratory and compete in industrial food markets.
The raw material was the starch fraction separated from maize by wet milling. Processors hydrolyzed that starch into a syrup composed largely of glucose, also called dextrose. Glucose isomerase—more precisely, an enzyme whose natural activity includes xylose isomerization—then rearranged part of the glucose into the sweeter sugar fructose. Japanese researcher Yoshiyuki Takasaki and colleagues had developed an industrially promising microbial enzyme system during the 1960s. Clinton licensed Japanese technology and adapted it to American corn refining, initially using batch processing.
The decisive engineering improvement was enzyme immobilization. Rather than discard soluble enzyme after each batch, manufacturers fixed enzyme-bearing material in reactors so syrup could pass through it continuously. Clinton adopted an automated continuous process using fixed beds in the early 1970s. Reusing the catalyst reduced enzyme costs, increased throughput, and made product composition more consistent. The resulting 42-percent-fructose syrup could substitute for sucrose in baking, canning, dairy products, condiments, and some beverages while arriving as a pumpable liquid suited to large factories.
Economics magnified the technology's importance. The United States possessed an enormous corn-growing and wet-milling system, while domestic sugar policy maintained prices favorable to cane and beet producers. The sharp sugar-price escalation of 1974 made alternative sweeteners especially attractive. Corn-milling byproducts such as oil, gluten feed, and meal also offset part of the raw-material cost. These combined technical and market conditions—not agricultural subsidies alone—helped HFCS capacity and sales expand.
Mass adoption in major colas came later than this card's core period. HFCS-55, blended to contain about 55 percent fructose and closely match sucrose's sweetness in soft drinks, was introduced commercially in 1977. Major beverage manufacturers increased their use around 1980 and during the early 1980s. HFCS consequently became a defining ingredient of the American processed-food system. Its history remains significant as an example of how microbial enzymes, crop-processing infrastructure, commodity prices, and food-factory logistics can rapidly alter the sweeteners present in everyday products.
