Instant Coffee Patent and Globalization

Reconstruction

The 1901 Chicago filing associated with Satori Kato is a landmark in instant coffee history, but not the product’s birth certificate. On April 17, 1901, Kato, a Japanese chemist living in Chicago, filed a United States patent application for a dry coffee concentrate; patent No. 735,777 was granted on August 11, 1903. His process addressed a practical industrial problem: how to separate coffee’s soluble and aromatic components, remove materials liable to spoil, and reunite them in a portable product that could be stored and quickly dissolved.

Kato’s patent describes roasting and pulverizing coffee beans, pressing out fats, distilling the volatile oil, extracting the remaining material with hot water, filtering away fiber, and evaporating the extract into a hard solid. The solid was granulated, while part was mixed with the recovered aromatic oil at low temperature before being recombined with the rest. The resulting concentrate could be sold as granules, flakes, or compressed tablets. These instructions are direct patent evidence; whether commercial products precisely followed every step is less certain.

Soluble coffee already had an important predecessor. New Zealand’s official patent register records David Strang of Invercargill applying on January 28, 1890, for “Strang’s Patent Soluble Dry Coffee-powder.” Contemporary advertising said it was made instantly with boiling water. Kato therefore should not be described as the sole inventor. His Chicago patent instead represents one branch of an international sequence of experiments in extraction, dehydration, aroma retention, packaging, and commercialization.

Large-scale demand followed. George Washington’s Coffee Refining Company marketed soluble coffee in the United States from about 1910. During the First World War, military logistics demonstrated the product’s usefulness: dried coffee required little preparation equipment, traveled in compact containers, and could be made near the front. The National WWI Museum reports that the U.S. Army took over much of the young soluble-coffee industry and produced as much as 6,000 pounds per day in 1918. Ordinary roasted coffee remained important, however, and the Army also shipped green beans overseas for local roasting.

The next decisive step linked food technology to a global commodity crisis. Brazil dominated world coffee production, but collapsing prices and enormous surpluses troubled producers during the interwar years. Nestlé states that a Brazilian request for a usable outlet helped prompt Max Morgenthaler’s development of Nescafé, launched in Switzerland in 1938. Instant coffee shifted extraction, filtration, and drying from the household into the factory, trading some aroma for consistency, portability, and convenience. Modern spray-dried and freeze-dried coffees retain this basic architecture, while later drinks such as the Greek frappé turned the industrial powder into new regional traditions.

Historical context

Chicago was one of the world’s largest industrial cities: its population rose from 1,698,575 in 1900 to 3,376,438 in 1930. Coffee reaching such cities depended on ocean shipping, railways, plantations, roasters, wholesalers, and increasingly branded packages. Brazil supplied roughly three-quarters of world coffee production around 1900, making distant consumers dependent on a concentrated tropical export economy. The First World War then placed severe pressure on shipping capacity and military food preparation, rewarding compact and stable products. During the 1930s, the Great Depression and chronic coffee overproduction encouraged governments and manufacturers to seek new markets and preservation methods. Nescafé’s 1938 launch came one year before the outbreak of the Second World War in Europe.
