Reconstruction
At Çayönü Tepesi, near the upper Tigris in southeastern Anatolia, the relationship between people and wild boar changed over many generations. The settlement preserves a long sequence from early village life into established farming, making it unusually valuable for tracing a process that did not happen in a single moment. Pig bones and teeth occur throughout the sequence, while changes in their size, age at death, and physical condition indicate increasing human control.
This was not simply the replacement of hunted boar by instantly recognizable domestic pigs. Zooarchaeologists document a gradual reduction in body and molar size, a growing emphasis on killing younger animals, and changes in the frequency of enamel defects associated with physiological stress. Taken together, these patterns support a reconstruction in which people first exploited local boar intensively, then managed free-ranging populations, and eventually controlled breeding and slaughter more closely. Hunting continued, so remains of large wild animals and smaller managed pigs occur together. Scholars therefore differ over exactly when the word “domestic” becomes appropriate.
The inhabitants of Çayönü ate more than pork. Archaeobotanical remains include cultivated einkorn and emmer wheat, field pea, lentil, and bitter vetch, while pistachios and other wild plants were collected. Pulses often outnumber cereals in the recovered plant assemblage. Animal remains include sheep or goats, cattle, red deer, gazelle, and other game, but pigs and wild boar were especially prominent in much of the early sequence. Human and animal isotope evidence is consistent with pork or boar contributing to diets, although it cannot reveal individual meals with certainty.
How pork was cooked at Çayönü is insufficiently documented. Meat was necessarily slaughtered and divided, but the surviving evidence does not justify a specific reconstruction of roasting, boiling, smoking, or curing. Because much of the relevant occupation predates pottery, cooking could have involved hearths, heated stones, skins, baskets, or other perishable equipment; applying any one method to Çayönü remains conjectural.
Pig husbandry mattered because pigs reproduce quickly, can forage around settlements, and convert varied foods and refuse into meat. They require water and provide little traction, fiber, or milk, however, so they fitted some environments and economies better than others. Their adoption was therefore uneven: pigs remained unimportant in parts of central Anatolia even as sheep and goat herding expanded.
Domestic pigs later moved west with Neolithic communities. Ancient DNA shows that introduced Anatolian and Near Eastern pigs subsequently interbred extensively with European wild boar, nearly replacing their original ancestry while husbandry continued. Modern pork production is thus connected to this early management tradition, but not through a simple, genetically unchanged line from Çayönü.
Historical context
Between roughly 8,500 and 7,500 BCE, permanent villages were spreading across the northern Fertile Crescent, but pottery was not yet in ordinary use at Çayönü. Communities were experimenting simultaneously with cultivated wheat and pulses, managed animals, rectangular architecture, lime processing, and exchange in materials such as obsidian and malachite. Çayönü stood in a woodland-steppe landscape on the Ergani plain, about 40 kilometers northwest of modern Diyarbakır. Its long occupation records the wider transition from hunting and gathering to food production rather than an abrupt “agricultural revolution.”
