Reconstruction
Between roughly 9000 and 7500 BCE, communities across northern Southwest Asia changed their relationship with wild sheep. Instead of obtaining every animal through hunting, people increasingly controlled where flocks moved, protected selected animals, and determined which were killed. The transition was gradual and geographically varied rather than a single moment of domestication. In the Upper Euphrates region, the clearest early evidence comes from Nevalı Çori, where herd demography and smaller, morphologically domestic sheep indicate management by about 8500–8100 BCE. Comparable developments elsewhere in Anatolia and the Fertile Crescent show that several communities may have contributed to the process.
Animal bones provide the most direct evidence for the resulting food economy. Managed sheep supplied meat, edible organs, marrow and carcass fat. Archaeologists infer management from changes in body size and from age-and-sex profiles that differ from ordinary hunting. Keeping breeding females while slaughtering selected males could preserve a flock while producing food, although intensive young-male culling did not become widespread across Southwest Asia until the early eighth millennium BCE. The earliest systems were diverse and experimental.
Exactly how the meat was prepared at Upper Euphrates settlements is poorly documented. Butchery and cooking are reasonable reconstructions, but no surviving recipe identifies a specifically sheep-based dish. These communities lived before pottery became common, so meat could have been roasted, cooked beside a fire or processed using perishable containers; assigning any one method to this event would exceed the evidence. Bones identify animals more securely than they identify meals.
Milk requires similar caution. Sheep eventually became important dairy animals, but direct chemical evidence for milk in Near Eastern pottery begins later, in the seventh millennium BCE. Herd mortality patterns have been interpreted as indirect evidence for sheep milking during the eighth millennium, near the end of this card’s range, but this remains an inference rather than direct proof for early Upper Euphrates flocks. Wool was later still as a specialized product. Early sheep probably had hairier, seasonally moulting coats; evidence for increasingly important fleece exploitation appears millennia after initial management, while large textile economies belong especially to later Mesopotamian societies.
The lasting significance was therefore not the immediate appearance of the modern multipurpose sheep, but the creation of a renewable managed population. Flocks converted vegetation and crop by-products into animal food, could reproduce under human supervision, and could be moved between grazing areas. Later selection produced dairy, meat, fat-tailed and wool breeds. Ancient genomic research confirms that sheep populations from prehistoric Türkiye stood close to the ancestry of later domestic flocks, although modern breeds are products of many subsequent migrations and episodes of selection.
Historical context
The Upper Euphrates and neighboring Taurus foothills contained permanent or repeatedly occupied Pre-Pottery Neolithic villages built from stone and mud brick. Pottery was not yet an ordinary household technology, but communities cultivated cereals and pulses, hunted wild animals and increasingly managed livestock. Nevalı Çori was occupied in several phases from approximately 8500 to 7600 BCE. By about 8300–8000 BCE, people had already transported managed sheep to Cyprus, demonstrating that early herding knowledge and animals could cross at least tens of kilometers of open sea.
