The First Electric Stove Is Demonstrated

On 29 August 1892, Ottawa electrical entrepreneur Thomas Ahearn staged a banquet intended to show that electricity could do more than illuminate buildings and propel streetcars. A complete meal was prepared with electric appliances at the Ottawa Electric Railway’s sheds and carried several blocks to the Windsor House hotel. The event is exceptionally well documented through Ahearn’s patent, a surviving menu, contemporary newspapers and electrical trade journals. It should not, however, be described simply as the invention or first demonstration of an electric stove: electrical cooking experiments and patents predated Ahearn’s machine.

Ahearn had recently received Canadian patent no. 39,916 for an improved electric oven. Its hearth contained enclosed pits holding resistance heaters, which converted electrical energy into heat. The banquet oven was a large, brick-built installation, reportedly about six feet wide, with an interior approximately four feet square. Two heaters drew 43 amperes at 50 volts. Plate-glass viewing openings and incandescent interior lamps allowed cooks to inspect food without repeatedly opening the oven, while the placement of the elements was promoted as producing more even heat than fuel-burning ovens.

The menu transformed an engineering trial into an extravagant public meal. It listed consommé royal; trout with potato croquettes and tartar sauce; sugar-cured ham, chicken and beef tongue; roast beef, turkey and stuffed veal; sweetbreads, lamb cutlets, vegetables, pastries, puddings, tea and coffee. Reports state that a 21-pound joint of beef, a 13-pound veal roast and three turkeys were cooked together. Liquids and sauces required separate electric heaters, so the achievement involved an electrically equipped cooking system rather than the oven alone.

Spot something wrong in this reconstruction?

The invited company included Ottawa’s mayor, utility and railway executives, journalists and other prominent guests. This was therefore both a technical demonstration and calculated promotion by an inventor who also controlled businesses that generated and sold electricity. After eating, guests travelled to the sheds to inspect the apparatus and hear Ahearn explain it. At Ottawa’s Central Canada Exhibition a few weeks later, a modified three-element oven baked twelve pans of buns at a time.

Ahearn’s oven did not immediately transform domestic cooking. It was bulky, expensive to operate and dependent upon electrical service and heavy wiring unavailable in most homes. Fuel-burning ranges consequently remained dominant for decades. In Ontario, electric ranges were still present in only a minority of homes during the 1920s and 1930s. Nevertheless, the banquet anticipated a durable food-system change: cooking heat could be produced without storing coal or wood in the kitchen, tending a fire or exhausting combustion smoke. Later ranges became smaller, gained durable heating elements and thermostatic controls, and benefited from expanding electrical grids. Ahearn’s demonstration was not the solitary birth of electric cooking, but it was a vivid early proof that electricity could prepare an entire formal meal.

Historical context

Canada was only twenty-five years past Confederation and had about 4.8 million inhabitants. Ottawa’s 1891 population was approximately 44,154, making it a small capital compared with Montreal and Toronto. Yet nearby waterpower at Chaudière Falls supported an unusually active electrical industry. Ahearn and Warren Soper had introduced Ottawa’s electric street railway in 1891, while most Canadian kitchens still relied on wood, coal or, where distribution networks existed, manufactured gas. Domestic electrification was initially concentrated in cities and often supplied lighting circuits inadequate for power-hungry cooking appliances.

Historical interpretation

LimitedNo excavated appliance, surviving banquet oven or archaeological context was identified as direct support; the reconstruction rests principally on documentary and iconographic evidence.
