Nieve de garrafa is not one fixed recipe but a Mexican family of manually frozen desserts. Historical context
The region was part of New Spain, whose population was roughly six million and whose capital was one of the largest cities in the Americas. Independence would begin with revolt in 1810 and be achieved in 1821. Sugar cultivation and long-distance trade were well established, but artificial refrigeration was not yet available. Natural snow and ice had to be harvested at elevation and transported rapidly through warm country, making frozen refreshments dependent on labor, infrastructure and purchasing power.
