Kungu begins not in a field or kitchen but above the water. At certain times, enormous swarms of small aquatic midges emerge from Lake Malawi and neighboring waters. Commonly called lake flies, they include non-biting midges associated with the lake’s food web; the exact species composition of any catch may vary. Lakeshore residents learned to treat these short-lived clouds as a concentrated seasonal food resource.

Collectors sweep containers, baskets, or nets through dense swarms, accumulating thousands of insects into a damp mass. The catch can then be compressed into patties and heated over a fire. Roasting and smoking drive off water, kill the insects, darken the cake, and give it a pronounced smoky character. Some accounts also describe further drying, which improves portability and keeping quality. Salt may be used today, but it is not necessary to bind the insects: moisture and the pressure applied to the mass help hold the cake together. Kungu may be eaten directly or as a protein-rich accompaniment to a starchy staple such as nsima.

The dish’s precise age is unknown. An assigned date of 1860 should therefore be understood as an approximate historical placement, not a documented invention or first appearance. Nineteenth-century travelers encountered societies around Lake Malawi with established fishing, farming, and foraging knowledge, but surviving outside descriptions do not securely establish when kungu began. Later ethnographic reporting provides much clearer evidence for its collection and preparation. Claims of a single inventor or exact point of origin would be unjustified.

Kungu is significant because it captures a food supply that is abundant for only a brief period. Unlike cattle or grain, the midges require no deliberate feeding, irrigation, or cultivated land, although successful gathering depends on detailed local knowledge of seasons, winds, swarm locations, and shoreline conditions. Heating and drying transform a highly perishable catch into a compact food, demonstrating preservation principles also applied to fish and meat.

Modern versions remain localized rather than becoming a standardized commercial product. Cake size, moisture, species mixture, salt content, and degree of smoking can all differ, so nutrition figures are necessarily approximate. Contemporary food-safety concerns also matter: insects collected near polluted water, roads, pesticide use, or unidentified swarms should not automatically be considered edible. Kungu nevertheless remains a striking example of how communities around a great African lake convert a dramatic ecological event into food, memory, and regional identity.

Historical context

No state called Malawi yet existed. The Lake Malawi region contained African farming and fishing communities shaped by Maravi successor polities, Yao commercial networks, and long-distance exchanges reaching the Indian Ocean. Ivory and enslaved people moved through increasingly disruptive regional trade routes. David Livingstone reached the lake in 1859 and publicized it in Europe as Lake Nyasa, shortly before missionary and colonial interventions intensified. Most food production remained local, based on rain-fed agriculture, fishing, livestock where conditions permitted, and seasonal gathering from forests, wetlands, and the lake.
