Butod is a common Sabahan name for edible palm-weevil larvae, especially those collected from sago palms. It describes an ingredient and a family of preparations rather than one fixed dish. The practice is associated with several Indigenous communities of Sabah, although terminology, preferred palms, collection methods, and recipes vary locally. Its beginning cannot be dated to 1900: insect harvesting in Borneo is older than surviving modern descriptions, but a precise origin has not been established.

The food begins with the palm. Weevils lay eggs in damaged, felled, or decaying trunks, and the larvae feed on the soft interior. Gatherers split the trunk and remove the pale, thick-bodied grubs by hand. Across the wider sago-growing world, people sometimes encourage this process by cutting palms and returning later, effectively managing a living food resource. Such management is plausible in Sabah, but it should not be assumed for every community without local evidence. The larvae convert fibrous palm tissue that humans cannot digest directly into concentrated edible fat and protein.

Preparation can be extremely simple. Fresh larvae are cleaned and may be roasted, skewered, dry-fried, or cooked in a pan with salt and chile. Heating browns the exterior and melts some of the abundant internal fat, producing a crisp or resilient skin around a soft center. Reports also describe raw consumption, but this is a cultural practice rather than a food-safety recommendation; thorough cooking reduces risks associated with environmental contamination and handling. Added oil is unnecessary for especially fatty larvae, although modern recipes sometimes use it.

Butod belongs to a larger palm-based food ecology in which sago pith, leaves, building materials, and insects can all be useful. Harvesting larvae from deteriorating trunks reduces waste and provides food without conventional livestock feed, yet yields depend on palm management, season, species, and habitat. It would be misleading to portray the practice as an emergency food or novelty alone. For participating communities, it can express environmental knowledge, taste, hospitality, and identity.

In contemporary Sabah, butod is sold in some markets and restaurants and displayed during cultural celebrations, including Kaamatan-related food events. Refrigeration, commercial frying, social media, and tourism have moved it beyond household collection, sometimes turning the larva into a challenge food for visitors. That framing can generate income and recognition, but it may also obscure the ordinary expertise behind harvesting. Modern butod therefore joins a longstanding local food practice to new festival and tourism economies without proving an unchanged recipe or continuous documentary history from any exact date.

Historical context

Sabah formed most of British North Borneo, administered by the British North Borneo Chartered Company. Official counts around the turn of the twentieth century suggested a population of roughly 100,000, though colonial enumeration was incomplete. Coastal ports connected forest products, tobacco, and an emerging rubber economy to regional and global trade, while many interior and wetland communities continued mixed farming, fishing, forest gathering, and palm use. Steamships and new rail construction increased commodity movement, but food production away from towns remained strongly shaped by local ecologies and Indigenous knowledge.
