Sate ulat sagu is a Papuan preparation in which edible palm-weevil larvae—commonly called sago worms—are threaded onto skewers and grilled. The larvae inhabit the soft interior of damaged, decaying, or felled sago palms. Their use belongs to a much broader sago food system: starch washed from the palm’s pith supplies carbohydrate, while fish, game, shellfish, and insects can provide protein and fat. Historical context

Western New Guinea was claimed by the Netherlands, although colonial administration and market penetration remained limited across much of the vast, environmentally diverse interior. Papuan communities maintained numerous distinct languages and food traditions. In many swampy lowlands, sago palms supported populations where cereal agriculture was poorly suited to local conditions. Meanwhile, steam transport, refrigerated shipping, and industrial food processing were transforming diets elsewhere; those global changes did not erase locally managed palm, forest, river, and coastal food systems.
