Inago no tsukudani is a Japanese preparation of grasshoppers simmered until they are coated in a concentrated sweet-salty sauce. Historical context
Tokugawa Ieyasu’s appointment as shogun in 1603 opened more than two centuries of Tokugawa rule. Japan probably held roughly 12–18 million people, with most living in farming communities organized around rice cultivation and taxation. Irrigation, castle-town growth, and regional commerce were expanding. Soy-based fermented seasonings were established, while refined sugar was still comparatively expensive and supplied partly through overseas trade; its broader use developed later. Portuguese contacts had already introduced new commodities and intensified exchanges linking Japan to maritime East and Southeast Asia.
