A practical household method is to simmer them in water, crush the softened flesh, and strain away skins and stones. Sugar can then be dissolved into the liquid. A lightly sweetened version is drunk after cooling, while a more concentrated preparation can function as syrup and be diluted later. Exact proportions vary greatly. Some modern recipes use uncooked or mechanically pressed fruit, and some preserve a concentrate by reheating and sealing it in bottles.

Historical context

Bosnia formed part of the Ottoman Empire, while Habsburg territories lay close to its northern and western frontiers. Sarajevo was an established craft and trading center connected to routes crossing the Balkans and linking inland markets with Adriatic and Ottoman commerce. Most food remained seasonal and locally produced, although sugar, coffee, spices, and other commodities traveled considerable distances.
