Fresh grape must is the liquid released when ripe grapes are crushed or pressed, before yeasts have converted much of its sugar into alcohol. It is usually cloudy, sweet, aromatic, and chemically unstable. Fermentation can begin within hours because yeasts occur naturally on grapes and equipment. In a Bronze Age vineyard community, must was therefore not simply “grape juice” in the modern packaged sense: it was a short-lived stage in the transformation of harvested fruit into wine, vinegar, or a concentrated sweetener.

The South Caucasus has exceptionally early evidence for grape use and winemaking, including grape remains and chemical residues in pottery dating well before 3000 BCE. These findings establish that people processed grapes and stored fermented products, but they do not directly demonstrate that fresh, unfermented must was served as a distinct beverage at the date assigned here. Drinking some juice during harvest is a reasonable reconstruction because crushing necessarily produced it, yet its deliberate preparation and social role remain uncertain. Nor can the modern Turkish word şıra be treated as a Bronze Age name.

Grapes could be trodden, squeezed by hand, or pressed with simple equipment; the precise method used at this place and date is not known. Coarse filtering through baskets, textiles, or settling is technologically plausible, although direct evidence is limited. The juice might be consumed immediately, transferred to jars for fermentation, or heated to reduce its water content. Boiling must into syrup improves keeping quality, but that specific practice should not be assumed for Bronze Age Georgia without supporting evidence.

Must mattered because it concentrated the vineyard’s annual harvest into a transportable liquid and opened several preservation pathways. Fermentation produced a more stable drink; acidification yielded vinegar; reduction could produce a dense sweetener. These transformations also altered labor, storage, taste, and exchange. Refrigeration slows fermentation and makes a consistently nonalcoholic product possible; pasteurization extends shelf life further. The defensible continuity lies in the harvest sequence—grapes crushed into must and then consumed or transformed—not in an unchanged recipe, name, or cultural identity spanning five millennia.

Historical context

Communities of the South Caucasus combined farming, herding, craft production, and expanding exchange networks. Grapevines were already being managed in a region with evidence for winemaking thousands of years earlier. Pottery vessels made bulk storage and fermentation possible, while wheeled transport and growing connections across Anatolia, Mesopotamia, the Caucasus, and the steppe moved goods and techniques over hundreds of kilometres. Tbilisi itself was not yet the later historic city suggested by the modern coordinates.
