Fresh orange juice is the liquid mechanically expressed from ripe sweet oranges, usually served raw and soon after squeezing. It may retain suspended pulp and natural cloud, unlike clarified or cooked fruit drinks. Its flavor combines sugars, citric acid, aromatic peel oils introduced during cutting or pressing, and volatile compounds that diminish after extraction. The simplest preparation needs only fruit, a knife, and hand pressure, although ridged citrus reamers and larger presses make extraction more efficient.

The drink has no securely documented single invention or exact emergence in 1700. Sweet oranges originated in Asia and reached Mediterranean cultivation through long-distance exchange, becoming increasingly important in southern European orchards during the later medieval and early modern periods. Portuguese maritime connections are often associated with their wider European spread, while grafting, irrigation, and protected cultivation helped establish productive trees. By around 1700, fresh juice was technically straightforward wherever ripe sweet oranges were available, but evidence for a distinct, routinely named Barcelona beverage at that precise date is limited. Earlier Mediterranean citrus drinks often used sour or bitter oranges, sometimes mixed with water, sugar, or other flavorings.

Preparation began by selecting fully colored, juicy fruit, cutting it across the segments, and squeezing or reaming each half. Straining was optional: pulp added body, while seeds and coarse membranes could be removed. Because raw juice ferments, oxidizes, and develops altered flavors relatively quickly, it was best consumed immediately. Before refrigeration and rapid transport, that perishability linked fresh juice closely to harvest seasons and citrus-growing districts. Oranges could travel as whole fruit more successfully than their expressed juice, so squeezing commonly occurred near the point of consumption.

Its social reach depended on orchard productivity and price. In northern Europe, imported oranges could remain luxuries or festive foods; in Mediterranean ports and producing regions, they were more accessible but not necessarily everyday fare for everyone. Sugar was unnecessary when sweet cultivars ripened well, distinguishing the drink from many sweetened sherbets and lemonades. Nutritionally, the juice supplied vitamin C and folate, although pressing removed most of the intact fruit’s fiber and made its sugars easier to consume rapidly.

The modern breakfast association is chiefly an industrial development rather than a direct continuation securely traceable to 1700. Mechanical extractors, pasteurization, cans, frozen concentrate, refrigerated distribution, and twentieth-century nutrition campaigns transformed a local, perishable drink into a standardized commodity. Fresh-squeezed juice remains the least transformed version, but even today its taste varies by cultivar, maturity, storage, pulp level, and whether peel oils enter during pressing. Its history therefore joins an ancient citrus migration to a much newer system of cold chains, mass marketing, and year-round consumption.

Historical context

Barcelona was a Mediterranean port of several tens of thousands of inhabitants, connected to regional orchards and maritime trade just before the War of the Spanish Succession began in 1701. European consumption was being reshaped by Atlantic sugar, coffee, tea, cacao, and colonial commerce, while citrus cultivation depended on older Asian plant transfers, grafting knowledge, and irrigated agriculture. Whole oranges could withstand transport better than extracted juice, which remained highly perishable in an era without mechanical refrigeration.
