The scarlet ingredient in bissap is not a flower petal but the fleshy calyx surrounding the seed capsule of Hibiscus sabdariffa, commonly called roselle. When dried calyces are steeped or simmered, they release red anthocyanin pigments and organic acids that produce a brilliantly colored, sharply tart infusion. In Senegal the drink is widely known as bissap or jus de bissap; related preparations appear across West Africa as sobolo and under other local names, while karkadé is especially associated with Egypt and Sudan.

Roselle is generally regarded as an African crop, although its precise domestication center and the chronology of its movement remain debated. The plant became established across tropical Africa and later circulated more widely through Indian Ocean and Atlantic exchange. No secure evidence fixes the invention of Senegalese bissap to 1700, and the modern French name cannot establish an early date. It is more defensible to understand the drink as part of a long, regionally varied history of cultivating roselle and turning preserved calyces into sour beverages.

Preparation requires little specialized equipment. Calyces are harvested after flowering, separated from the seed capsules, and dried, allowing them to be stored and traded beyond the harvest season. A cook infuses them in hot or cold water, strains out the plant material, and adjusts the concentrated liquid to taste. Contemporary Senegalese versions commonly contain sugar; ginger, mint, pineapple, citrus, or flavorings may also be added. Recipes range from lightly sweetened infusions to syrupy refreshments, so there is no single standard composition.

Sugar materially changed the drink's possibilities. During the early modern period, expanding Atlantic commerce increased the movement of plantation sugar, but access and price varied sharply, and routine sweetening in a particular Senegalese household in 1700 cannot be assumed. Likewise, the familiar service over ice is modern. Before mechanical refrigeration, the drink could be consumed warm or at ambient temperature, or cooled where appropriate vessels, wells, evaporation, or scarce imported ice permitted it. Today's cold bottled or bagged forms depend on later refrigeration, ice production, and inexpensive packaging.

Bissap's durability and scalability help explain its importance. Dried calyces occupy little space, withstand storage, and can yield many servings from one batch. The drink consequently fits domestic hospitality, religious and family celebrations, market stalls, and mobile vending. It also provides income for growers, processors, and vendors, many of them women in present-day West African food economies. Commercial concentrates and bottled versions now travel far beyond the region. Yet the continuity lies chiefly in the calyx infusion itself: modern sweetness, cold service, flavor combinations, and packaging reflect changing trade, technology, and consumer expectations rather than an unchanged recipe preserved from a precisely known founding year.

Historical context

Atlantic commerce was intensifying along the West African coast, moving sugar, textiles, metals, enslaved people, and agricultural products through coastal trading posts. Saint-Louis had been established near the mouth of the Senegal River in the seventeenth century, while the modern city of Dakar did not yet exist; Cap-Vert was occupied by established Lebou communities. Sugar was increasingly available through Atlantic plantation systems but remained unevenly accessible. Mechanical refrigeration, manufactured ice, and modern bottling lay far in the future, so a roselle infusion could be stored as dried calyces but not routinely served in the iced form familiar today.
