Pineapple juice is the liquid expressed from the ripe flesh of the pineapple, sometimes retaining pulp and sometimes strained clear. Fresh juice was most practical close to production. A ripe pineapple could be peeled and its flesh crushed in a mortar, pounded in a vessel, grated, or squeezed through cloth or basketry. Straining removed coarse fibers; retaining crushed flesh made a thicker drink. Water could extend the yield, while cane sugar was unnecessary for fully ripe fruit but could balance acidic or underripe juice. Fermentation begins readily in warm conditions, so juice needed prompt consumption unless deliberately allowed to ferment. Serving it cold around 1700 would have required naturally cool water or scarce stored ice rather than modern refrigeration.

The drink’s early social setting is less clearly documented than the fruit’s global movement. In producing regions it was an accessible way to use ripe or damaged fruit that might not survive transport. In colonial and elite settings, pineapple also entered punches, syrups, preserves, and decorative service. These uses connected Indigenous crop knowledge to plantation economies built partly through coerced and enslaved labor. The fruit’s celebrated exotic image therefore obscures the unequal systems that expanded its cultivation and trade.

Industrial transformation came much later than the nominal 1700 date. Mechanized crushing, pasteurization, canning, refrigerated transport, and eventually aseptic packaging turned a highly perishable local drink into a stable commercial product. Twentieth-century processing industries, especially those associated with large plantation regions, standardized flavor and created outlets for fruit unsuitable for sale whole. Heating improved safety and shelf life but altered fresh aromas and inactivated bromelain, the pineapple’s protein-digesting enzyme.

Modern pineapple juice ranges from fresh, pulpy pressings to clarified, pasteurized, canned, concentrated, or reconstituted products. It is drunk alone and used in punches, cocktails, marinades, sauces, and blended tropical beverages. That diversity represents adaptation rather than an unchanged recipe traceable to one moment: the basic act of pressing fruit is old, while the consistently chilled, packaged glass familiar today depends on industrial food technology.

Historical context

Atlantic and Indian Ocean shipping was moving American crops, African laborers, Asian commodities, and European capital across thousands of kilometres. Plantation sugar production was expanding through coerced and enslaved labor, making sweetened drinks more attainable in some colonial markets while imposing enormous human costs. Pineapple plants had already crossed oceans, but ripe fruit remained difficult to transport because it bruised and fermented quickly. In Europe, pineapples were rare prestige objects; successful heated-glasshouse cultivation emerged around the turn of the eighteenth century. In tropical settlements, preservation relied on rapid consumption, drying, sugar, fermentation, or boiling, while dependable mechanical refrigeration still lay far in the future.
