Rhubarb cordial, called rabarbersaft in Danish, is a strained, sweetened drink made from the edible stalks of culinary rhubarb. Depending on the cultivar, its color ranges from pale green to vivid pink-red. It can be bottled as a concentrated syrup for dilution or prepared less sweet as a ready-to-drink refreshment. The combination of strong acidity, sugar, and a short spring season made rhubarb especially suited to northern European traditions of household juice and cordial making.

Rhubarb had a much older Eurasian history as a medicinal plant. Dried roots from Asian Rheum species circulated over long-distance trade routes and were valued as purgatives. Concentrated cordial is poured into clean bottles and diluted for service. Earlier keeping quality would have varied with sugar concentration, cleanliness, sealing, and storage temperature; later heat processing, standardized bottles, refrigeration, and commercial preservatives made storage more reliable.

Only the stalks are used. Rhubarb leaves contain high concentrations of oxalates and other compounds and should not be eaten. Stalk color is not a dependable measure of sweetness, and substantial sugar is usually required to balance their acidity. That dependence tied the cordial to a consequential commodity: much European cane sugar was produced in plantation systems sustained by enslaved or coercively controlled labor. Growing affordability widened access to sweet preserves while obscuring those human costs.

Rhubarb cordial remains common as a homemade seasonal drink in Scandinavia and is related to other European saft traditions based on berries or orchard fruit. Contemporary versions range from heavily sweetened concentrates to lightly sweetened refrigerated juices. Frozen rhubarb, modern canning, and commercial bottling have loosened the drink from its brief harvest, but its characteristic contrast—garden-sharp stalks transformed by sugar—still reflects the food changes that accompanied early industrial Europe.

The world population was approaching one billion, while Copenhagen held roughly 100,000 inhabitants and Denmark remained predominantly agrarian. Northern households preserved seasonal produce without mechanical refrigeration, relying on drying, fermentation, cool storage, and increasingly sugar. Cane sugar reached Europe through global maritime commerce and plantation economies; beet sugar had not yet become the dominant northern European alternative.
