Baru is not a botanical nut but the edible seed of Dipteryx alata, a large leguminous tree native to the Brazilian Cerrado and neighboring savanna regions. Each fleshy fruit encloses a very hard, woody stone containing one seed. Today’s roasted baru snack thus links an established Cerrado food practice with a newer market for native ingredients, but it cannot by itself counter the large-scale conversion of the savanna to pasture and commodity agriculture.
