Kuli-kuli is a crisp West African groundnut cake made by pressing oil from roasted peanut paste, seasoning the remaining solids, shaping them, and frying them. It is particularly familiar in Nigeria and has closely related forms in Benin and neighboring countries. Rings, rods, twists, and compact cakes are all encountered. The name and exact recipes vary by language, locality, and producer, so kuli-kuli is better understood as a family of market snacks than as one standardized formula.

Peanuts originated in South America and reached western Africa through Atlantic exchange after European contact. By the nineteenth century, groundnuts had become important both as food and as an export oilseed in several parts of West Africa. Kuli-kuli belongs to this established groundnut-processing economy, but an exact invention date around 1900 is not securely documented. Attributions to particular Nigerian communities circulate in modern accounts, yet the available historical picture does not justify naming a single inventor or unquestioned birthplace.

Preparation begins with sound, dry groundnuts. They are roasted, skinned when desired, and ground until their own fat produces a paste. The paste is kneaded, sometimes with warm water, while oil is squeezed or pressed out. This creates two useful products: groundnut oil and a comparatively protein-rich press cake. The cake is mixed with salt and optional chile or other seasonings, formed by hand, and fried—often in some of the expressed oil—until dry and crisp. Pressing intensity, frying time, and added oil strongly affect texture and nutritional composition.

Kuli-kuli is commonly eaten as a portable snack, but it can also be crushed into porridges, salads, or soaked gari, adding crunch, fat, flavor, and protein. Its market life links household food preparation with small-scale commerce: processors can sell both cooking oil and a value-added food rather than treating the pressed solids as waste. Frying and moisture reduction improve keeping quality compared with fresh peanut paste, although the fat can become rancid during prolonged or poorly protected storage.

Today, artisanal kuli-kuli remains widespread alongside sealed, labeled commercial packets. Milling and mechanical pressing can replace some hand labor, while recipes may use stronger seasoning or more uniform shapes. The essential method nevertheless persists. Its history illustrates the creative adaptation of an introduced American crop within West African cuisines and the importance of women and small producers in oilseed processing and market trade. Food safety remains consequential: contaminated groundnuts can contain aflatoxins, and frying does not reliably eliminate them, making crop drying, sorting, and storage as important as the final cooking.

Historical context

The territories now called Benin and Nigeria were being incorporated into French and British colonial systems, while railways, ports, and merchant networks increasingly connected inland farms with coastal export markets. Groundnuts were already well established in West African agriculture centuries after their arrival from South America. Commercial oilseed production was expanding, although its scale and importance differed sharply by region; Senegambia and northern Nigeria became especially prominent groundnut zones. Most processing remained labor-intensive, using roasting vessels, mortars, grinding stones, hand mills, cloth, and simple presses. Urban and roadside markets supported a large trade in prepared foods, much of it conducted by women. Colonial commodity demand encouraged cash-crop production but could also expose cultivators and food supplies to price changes, taxation, and unequal transport policies.
