Macadamia nuts are the rich, round kernels of Australian rainforest trees, especially Macadamia integrifolia and Macadamia tetraphylla, the two principal edible species in modern cultivation. Aboriginal peoples in the trees’ natural range—centered in southeastern Queensland and northeastern New South Wales—gathered and ate the nuts long before Europeans classified them. Historical accounts support this Indigenous use, although the chronology and details of particular preparation methods are less securely documented than the broad fact of consumption.

The year 1857 marks a botanical event, not the invention of roasted macadamias. Ferdinand von Mueller formally established the genus Macadamia and named it for John Macadam. Colonial science thereby placed an already-known Indigenous food within European taxonomy. Settlers subsequently experimented with planting the trees, and commercial orchards appeared later in the nineteenth century. This development depended partly on Indigenous knowledge of the nut and its habitat, but the resulting industry generally did not return comparable recognition or economic benefit to Indigenous communities.

Preparing macadamias begins with removing an outer green husk and opening an exceptionally hard shell. Traditionally, kernels could be cracked with stones or other heavy implements. Commercial processing eventually introduced calibrated mechanical crackers, drying systems, grading, and controlled roasting. Drying is especially important because it reduces kernel moisture, improves keeping quality, and makes the shell separate more readily from the kernel. Gentle roasting develops aroma and a pale-golden color; excessive heat can scorch the kernel and damage its fat-rich flavor. Salt is optional, and oil is unnecessary because the nut itself contains roughly three-quarters fat, much of it monounsaturated.

Macadamia cultivation spread beyond Australia most consequentially in Hawaii, where growers, researchers, and processors helped turn the tree into a standardized orchard crop during the twentieth century. Selection, grafting, mechanical harvesting, and centralized cracking overcame problems posed by variable seedlings and resistant shells. Hawaii became strongly associated with the packaged nut, even though the trees were Australian in origin. Cultivation later expanded in Australia and into parts of Africa, Latin America, and Asia with suitable subtropical or tropical highland conditions.

Today the kernels are sold raw or roasted and appear in confectionery, biscuits, desserts, nut butters, and savory dishes. Modern roasting continues a straightforward way of making the kernel aromatic and crisp, but the contemporary product rests on technologies of orchard selection, moisture control, shell cracking, and global distribution. Its history links enduring Aboriginal food knowledge to colonial botany and an international luxury-crop industry, while raising unresolved questions about acknowledgment, ownership, and benefit sharing.
