Historical context

Qing China under the Jiaqing emperor supported some of the world’s largest cities and an extensive internal trade in grain, oils, sugar, tea, and specialty foods. Beijing probably held several hundred thousand inhabitants and may have approached one million depending on how boundaries and temporary residents are counted. Water- and animal-powered mills existed, but household and workshop food processing still relied heavily on mortars and stone grinders. Sesame was already an established Asian oilseed; the global industrialization of food milling, packaging, and long-distance steam transport was only beginning.
