Thorough heating is especially important for pulaka because raw or inadequately cooked aroid tissue may contain irritating calcium oxalate crystals. Some contemporary recipes add a sweet coconut syrup or sugar, but it is uncertain whether concentrated sweetness was universal in earlier forms. The dish may function as a substantial starch, a rich shared food, or a dessert-like preparation depending on proportions and occasion.
