Kokoda is a Fijian preparation of raw fish marinated in citrus juice and combined with coconut milk or cream, vegetables and chile. It is usually served cold, producing a balance of tartness, coconut richness, fresh fish and crisp vegetable textures. Recipes vary considerably: some are intensely acidic, while others emphasize coconut; some include capsicum, spring onion or herbs. Salt may be added, and the finished dish may be chilled before service. It can appear as an appetizer, a shared dish at family or festive meals, or restaurant fare presented in a coconut shell.
Fish and coconut have deep importance in Pacific Island foodways, but the complete modern ingredient list represents historical layering. Citrus varieties, tomatoes, onions, chiles and cucumbers reached or became established in Fiji through long-distance exchange and colonial-era agriculture at different times. Fiji had been a British colony since 1874, Suva had become the colonial capital, and sugar and copra were increasingly tied to overseas markets. The islands held roughly 120,000 people around the beginning of the twentieth century, including Indigenous Fijians and a rapidly growing Indo-Fijian population created largely through indentured migration from British India. Steamship connections expanded the movement of labor, preserved foods and produce, but refrigeration remained limited. Fishing, coconut cultivation and locally grown starches still underpinned many island diets even as plantation agriculture, imported ingredients and colonial commerce reshaped what appeared in markets and kitchens.
