Across the tropical Pacific, raw-fish salads bring together two foundations of island foodways: fish taken from reefs or open water and coconut used for its rich liquid. There is no single dish uniformly called “Pacific raw-fish salad.” Instead, related preparations appear under distinct local names and recipes, including ota ika, ika mata, kokoda and poisson cru in different island groups. Kiribati, Tuvalu and the Solomon Islands likewise possess their own ways of serving raw or acid-marinated fish. Treating all of these as one standardized recipe is therefore a useful culinary summary, not evidence of one documented point of origin.
The basic method begins with exceptionally fresh fish, often a firm-fleshed species available locally. The flesh is skinned, boned and cut into cubes or strips. Citrus juice is then added for a short or extended marination. Its acid denatures surface proteins, making the fish opaque and firmer, but this transformation is not cooking by heat and does not reliably eliminate parasites or pathogens. Coconut milk or cream softens the acidity and supplies fat, sweetness and aroma. Salt and vegetables such as onion, cucumber or tomato provide contrast, although these ingredients and citrus varieties reflect post-contact cultivation, commerce and changing tastes rather than an unchanged ancient formula.
Preparation varies significantly. Some cooks drain off the citrus before folding in coconut milk; others retain part of the marinade. Ratios range from sharply acidic and lean to generously coated with coconut cream. The salad may be eaten soon after mixing or served chilled, now commonly with refrigeration. Historically, communities without mechanical cooling depended on immediate preparation and consumption, careful sensory judgment and very recent catches. Modern food-safety guidance places greater emphasis on sanitary cutting surfaces, continuous chilling and fish that has received appropriate parasite control.
These salads cannot be dated securely to 1900. Pacific peoples had eaten raw fish and coconut long before that year, while citrus, metal tools, imported vegetables and colonial food markets altered particular recipes over time. Around the turn of the twentieth century, expanding shipping and plantation economies increased the circulation of onions, tinned foods and other imported provisions. Later tourism and restaurants helped present named island versions as emblematic national or regional dishes, sometimes standardizing recipes that remained more variable in households.
Today the preparation continues to express fishing skill, hospitality and attachment to marine environments. It also exposes modern pressures: reef decline, overfishing, dependence on imported produce and the need for reliable refrigeration. Its continuity lies less in a fixed ingredient list than in the repeated act of transforming a fresh catch with acidity, coconut and shared service.

Historical context
Most Pacific island communities remained heavily dependent on fishing, coconuts, breadfruit, pandanus and root crops, while colonial governments and steamship routes were reshaping trade. The Gilbert Islands were under a British protectorate, and commercial copra tied remote atolls to distant markets. Phosphate extraction on Banaba began around 1900, accelerating labor migration and imported provisioning. Mechanical refrigeration existed internationally but was not yet an ordinary household technology on remote islands, so raw fish generally had to be prepared close to the time and place of capture.
