Karewe begins not with the coconut fruit but with the palm’s unopened flower stalk. A tapper cuts or bruises the spathe and attaches a container to collect the sap that drips from it. In Kiribati usage, karewe generally means this coconut toddy itself: a sweet, cloudy liquid when fresh, but one that ferments rapidly in tropical heat. Calling the reduced product “karewe syrup” is therefore understandable but potentially imprecise. Concentrated toddy is also associated with the Kiribati term commonly transcribed as kamaimai, with spelling and usage varying.

Fresh sap had to be collected regularly and handled quickly. Left at ambient temperature, naturally occurring yeasts convert its sugars into alcohol, followed under suitable conditions by further souring. Fermentation could be intentional, but it also competed with the production of a sweet concentrate. To make syrup, collectors heated fresh toddy so that water evaporated and the sugars became concentrated. Continued reduction produced a darker, thicker liquid whose flavor reflected caramelization as well as the original sap. Exact consistency depended on cooking time, fuel, household preference, and intended storage.
