石花凍 is a chilled jelly made by extracting agar from dried red seaweed. Heat releases agar-forming polysaccharides into the liquid, which is then strained to remove the plant material. As it cools, the extract forms a firm, translucent gel without animal gelatin. Cooks cut the jelly into cubes or irregular pieces and serve it cold, plain or with sugar syrup, honey, citrus or other flavorings. Acid may also be used during extraction in some household methods, although recipes vary.
