Water in the seaweed flashes into steam while the batter sets, producing a fragile crust around a softer interior. Excess water can cause dangerous splattering and a heavy result, so draining is an important practical step. The fritters are normally eaten immediately, sometimes with salt or a light dipping sauce.
Aosa was also dried, powdered or simmered in soups and tsukudani. Tempura offered a different sensory form: frying amplified aroma, supplied richness and turned a soft marine vegetable into a crisp snack or side dish. It also placed a cultivated coastal crop within the recognizable meal grammar of tempura restaurants and home cooking. The result was not simply an ancient survival, but a modern regional expression built from an older frying technique and an increasingly organized aquaculture economy.
Today the dish appears in regional restaurants, tourism menus and domestic recipes, while packaged dried aosa allows versions to be made far from Mie. Modern tempura flour and controlled frying oils simplify preparation, but recipes vary greatly in batter thickness, seaweed proportion and oil absorption. The 1950 census counted roughly 84 million people, and food supply, fisheries and rural livelihoods remained central reconstruction concerns.
