Haidai paigu tang (海带排骨汤) is a clear Chinese soup of pork ribs and edible kelp. The ribs produce a lightly gelatinous meat broth; broad pieces of kelp contribute glutamates, mineral notes, and a texture that becomes tender but may remain slightly resilient. Ginger, scallion, rice wine, and salt commonly season the pot, although household recipes vary. Sesame oil may be added at the end rather than treated as an indispensable ingredient.

Cultivation along northern coasts, followed by expansion and distribution through national markets, transformed a marine plant into an inexpensive everyday vegetable available far inland. The soup should therefore be understood as a home-style dish enabled at scale by modern aquaculture, not as a creation known to have originated in 2015.
Preparation begins by soaking dried kelp, if used, and washing away grit or excess surface salt. Some cooks blanch it briefly. Pork ribs are usually chopped across the bone, blanched, and rinsed; this removes coagulated proteins and helps produce the clear broth prized in many domestic recipes. The ribs then simmer gently with aromatics. Kelp can be added early for a very soft texture or later to preserve more bite. Salt is best adjusted near the end because dried or commercially prepared kelp may already contain sodium.
The finished soup is served hot as part of a shared meal, often alongside rice and other dishes. Bone-in ribs require diners to eat around the bones, while the broth distributes meat flavor through a larger volume of food. Dried kelp also connects coastal production with inland kitchens: dehydration reduces weight, extends storage, and permits year-round transport.

China had more than 1.3 billion people and a predominantly urban population, supported by refrigerated transport, supermarkets, online retail, intensive livestock production, and the world’s largest aquaculture sector.
