Gochugaru is dried red chile ground into flakes or powder, valued for a combination of heat, red color, and often a distinctly fruity sweetness. Coarser grades are commonly used in kimchi, while finer powder can enter gochujang, sauces, soups, stews, and seasoned vegetable dishes. It is an ingredient rather than a complete prepared meal, and its character varies with pepper cultivar, ripeness, drying conditions, and how much seed and internal tissue remain in the grind.
No Capsicum species originated in Korea. Chiles were domesticated in the Americas and reached Asia through the maritime networks created after European contact with the Americas. Korean writings from the early seventeenth century are generally understood to mention the foreign pepper, but they do not establish a single year, route, or place of introduction. A frequently repeated story makes Japan the immediate source, possibly through contacts surrounding the Japanese invasions of Korea in 1592–1598. That route is plausible, but the precise pathway remains debated; movement through China and regional trade networks must also be considered.
Making gochugaru begins with fully ripe red peppers. Traditionally they were dried in the sun, sometimes after splitting, until sufficiently dry for storage and grinding. Modern production also uses controlled hot-air drying, which reduces dependence on weather but can produce different color and flavor. Stems are removed, and processors may adjust the proportion of seeds and pale internal tissues. Capsaicin is concentrated mainly in the inner placental tissue rather than the seeds themselves, although removing seeds often removes attached hot tissue as well. The dried peppers are then crushed coarsely or milled finely according to their intended use.
Chile did not instantly turn Korean preserved vegetables red. Earlier kimchi traditions used salt, aromatics, vegetables, and fermentation without Capsicum. Evidence for chile in Korean food becomes clearer over the seventeenth and eighteenth centuries, and eighteenth-century culinary writing supports its use in preserved vegetables. Over time, gochugaru became especially compatible with kimchi-making: it dispersed through vegetable mixtures, supplied flavor and color, and worked alongside salting, seafood seasonings, and lactic-acid fermentation. It should not, however, be described as the preservative solely responsible for kimchi’s safety or fermentation.
Modern gochugaru ranges from carefully sun-dried regional products to standardized commercial powders. Korean pepper varieties and processing preferences generally distinguish it from cayenne or generic crushed red pepper, so substitutions can alter both heat and texture. Its history is a clear example of the Columbian Exchange becoming local: an American crop was not merely adopted but selected, processed, and embedded in an existing Korean culture of fermentation until it became a marker of Korean flavor worldwide.

Historical context
Joseon Korea was recovering from the destructive Japanese invasions of 1592–1598, which had disrupted farms, settlements, and state finances. Ming China remained the dominant regional power, while Tokugawa rule began in Japan in 1603. Farther south, Manila—established as a Spanish colonial entrepôt in 1571—linked American silver and crops to Asian commercial networks. Chiles, maize, sweet potatoes, tobacco, and other American plants were moving through several overlapping maritime and overland routes, making any single route of Korean chile introduction difficult to prove.
