For a simple cake, starch is moistened and spread or pressed onto a hot surface until its granules gelatinize and the mass holds together. Depending on local practice and available equipment, cooking may involve a pan, griddle, heated stone, or other hot surface. Coconut milk or grated coconut can add fat, aroma, and tenderness. Banana provides sweetness, while fish may be served beside the cake or incorporated into a more elaborate preparation.
