On a hot, dry griddle, hydrated cassava starch behaves unlike an ordinary flour. The cook sieves or crumbles it into an even layer; moisture and heat cause the starch particles to gelatinize at their contact points, binding them into a thin, pale disk. It is cooked briefly, commonly folded, and eaten warm. Salt may be the only addition, although modern fillings range from coconut and cheese to condensed milk, eggs, or shredded meat.
The technique rests on a much older Indigenous South American cassava tradition. Indigenous peoples domesticated cassava long before European arrival and developed sophisticated ways to grate, press, wash, settle, toast, and bake it. These operations were particularly important for bitter cassava varieties, whose cyanogenic compounds make inadequate processing dangerous. Settled starch, coarse meal, and extracted liquid became distinct products rather than waste. Portuguese colonists borrowed Indigenous terminology and depended heavily on cassava foods, including flat cakes usually described under names such as beiju. However, the precise date at which the present-day loose, hydrated-starch skillet crepe acquired its standardized form and widespread name is not securely established. Treating 1600 as a documented invention date would therefore go beyond the evidence.
To make the starch, grated cassava is mixed or washed with water and strained. Starch settles from the liquid, after which it can be drained and dried or retained in a moist form. For the crepe, sufficiently damp starch is broken up and sifted. No gluten network, egg binder, or added fat is required: gelatinization alone joins the granules. This makes the unfilled cake almost entirely carbohydrate, with little protein, fat, fiber, or micronutrient content. Its composition differs markedly from whole-root cassava breads and meals, which may retain more fiber.
Cassava processing became entangled with colonial expansion. The crop spread from the Americas to Africa and parts of Asia through Portuguese and other maritime networks, while in Brazil cassava flour fed Indigenous communities, colonists, enslaved Africans, travelers, and plantation populations. That history reflects both resilience and coercion: European settlers appropriated indispensable Indigenous crops and techniques while colonial violence devastated their originators.
Today, tapioca crepes are strongly associated with northeastern Brazil but are eaten nationwide, including at markets, cafés, and home breakfast tables. Commercially prepared hydrated starch has removed much of the labor of extraction, while refrigeration and packaged fillings have expanded possible combinations. The modern crepe cannot be projected unchanged into the seventeenth century, yet its underlying transformation—cassava starch fused rapidly on a hot surface—preserves a visible connection to Indigenous expertise that shaped Brazilian food.

Historical context
Portuguese Brazil was dominated economically by Atlantic sugar production, especially along the northeastern coast. Sugar estates relied increasingly on enslaved African labor, while warfare, epidemic disease, mission settlement, and enslavement disrupted Indigenous societies. Cassava remained essential because it grew in tropical soils, tolerated irregular conditions, and could be processed into transportable meal and breads. By around 1600, Portuguese maritime routes had also carried cassava to parts of Africa, although its expansion there was gradual rather than instantaneous.
