Santorini Assyrtiko is a dry white wine made chiefly or entirely from Assyrtiko grapes grown on the volcanic island of Santorini. Its best-known qualities are high acidity despite a hot, dry growing season, restrained fruit, and flavors commonly described as citrus, stone, smoke, or salinity. Such tasting language is sensory rather than chemical proof that the wine contains exceptional amounts of salt.
The year 1207 belongs to Santorini’s medieval political history, when Latin rule followed the Fourth Crusade and the island entered the orbit of Venetian-aligned Aegean lordships. Santorini certainly possessed a long wine culture, and wine later became an important export under Venetian and Ottoman government. However, there is no secure evidence that the named Assyrtiko variety or today’s dry varietal style emerged in 1207. The grape’s documented identification is considerably later. Medieval production should therefore not be reconstructed from the card’s modern recipe.
Santorini’s vineyard system developed in response to severe environmental constraints. Rain is scarce during the growing season, strong winds can damage shoots, and soils formed from volcanic ash, pumice, and lava contain little organic matter. Growers traditionally prune vines into low, coiled baskets called kouloura. Grapes mature inside the basket, where they receive some protection from windblown grit and intense exposure. The porous ground and humid maritime air can provide limited moisture, although descriptions claiming that vines live entirely on sea mist oversimplify their water supply.
Another defining feature is the survival of ungrafted vines. Phylloxera, the root-feeding insect that devastated European vineyards from the nineteenth century onward, did not become established in Santorini’s sandy volcanic soils. Individual trunks are not necessarily ancient: growers may renew a plant by layering a shoot and allowing it to form new roots. The continuing root systems and locally maintained planting material nevertheless represent an unusual viticultural inheritance.
Modern Assyrtiko is usually harvested, pressed, clarified, and fermented to dryness with temperature control in stainless steel. Some producers use wild fermentation, lees aging, skin contact, concrete, amphora-like vessels, or oak. These choices can produce styles ranging from lean and sharply acidic to textured and oxidative. They are modern options rather than a single timeless method. Historically, Santorini was also renowned for sweet, sun-dried wines, especially Vinsanto; the internationally prominent dry Assyrtiko style belongs largely to the modern quality-wine economy.
Today the wine expresses both survival and vulnerability. Low yields support concentration but raise costs, while drought, hotter conditions, tourism development, and competition for land threaten vineyard continuity. Assyrtiko is now planted elsewhere in Greece and abroad, yet Santorini remains its reference point because the island’s variety, training system, ungrafted vines, and volcanic environment operate together rather than as interchangeable parts.

Historical context
The Fourth Crusade had fractured Byzantine authority, and Venetian commercial power was expanding through Aegean ports and islands. Santorini entered a succession of Latin-ruled lordships connected to maritime routes linking Constantinople, Crete, mainland Greece, Italy, and the eastern Mediterranean. Wine was already a durable trade commodity, but the island’s population, vineyard area, grape varieties, and wine styles in 1207 cannot be quantified securely. Stainless-steel tanks, refrigeration, modern microbiology, and named varietal marketing lay many centuries in the future.
