Handia is a family of cloudy, lightly alcoholic rice beverages made in parts of eastern and central India, particularly Jharkhand, Odisha, West Bengal, Chhattisgarh, and adjoining areas. It is strongly associated with several Adivasi communities, although recipes, names, and social rules vary. No secure evidence fixes its invention to 1800. The practice is likely older, but assigning a precise origin would turn living tradition into an unsupported founding date.
Unlike European beers based on malted grain, handia normally begins with fully cooked rice and a dried starter commonly called ranu, bakhar, or by other regional names. Starter cakes may contain rice or another cereal flour together with locally selected plant materials. Their crucial function is microbial: amylolytic molds and other organisms break rice starch into fermentable sugars, while yeasts produce alcohol and lactic-acid bacteria contribute acidity. The exact microbial community differs among starters and households. Calling ranu simply an “herbal” ingredient therefore understates its role as a maintained mixed culture.
For preparation, rice is boiled or steamed, spread out, and cooled so that excessive heat does not kill the starter organisms. Powdered starter is mixed through the rice, which is placed in an earthenware or other covered vessel. During several warm days of largely solid-state fermentation, saccharification and alcoholic fermentation proceed together. The fermented mass may then be mixed with water and strained, yielding a pale, cloudy drink; in some settings the liquid and softened rice are consumed with less separation. Strength, sweetness, acidity, and thickness depend on rice variety, temperature, fermentation time, starter quality, and dilution.
Handia is more than a substitute for commercial beer. It may be offered to guests, shared during festivals and life-cycle observances, carried to agricultural work, or sold in local markets. Household production has often provided women with income, although gendered responsibilities are not identical everywhere. Drinking can mark reciprocity and belonging, while ritual use may connect grain, ancestors, and the agricultural cycle. These roles should not be generalized into a single “tribal” custom: eastern India contains many communities with distinct practices and histories.
Colonial excise systems and later alcohol regulation brought household ferments into uneasy contact with taxation, policing, and commercial liquor. Modern handia nevertheless remains a fresh local product because its active microorganisms, variable dilution, and limited keeping quality resist complete standardization. Contemporary microbiological study can describe its fermentation, but the knowledge embodied in selecting plants, making starter cakes, judging aroma, and timing a batch remains rooted in household practice. Its closest modern continuity is therefore handia itself—not an industrial beer descended from it, but an enduring fermentation tradition adapted to changing markets and regulation.

Historical context
The East India Company was extending revenue collection and political influence across eastern India, although authority in the forested and upland country of Chota Nagpur remained uneven and frequently contested. India probably held roughly 170–200 million people around 1800, most living in rural communities dependent on seasonal agriculture. Rice cultivation supported numerous regional fermented foods and drinks. Meanwhile, European brewing was becoming increasingly commercial and mechanized; steam power, large urban breweries, thermometers, and improved transport encouraged more standardized beer, in marked contrast to household fermentation maintained through locally reproduced starter cultures.
