Japanese nel-drip coffee is brewed by passing hot water through ground coffee held in a reusable flannel pouch. “Nel” abbreviates flannel, and the apparatus is usually supported by a wire frame or handle above a cup or serving vessel. The method allows the brewer to control temperature, flow, and saturation by hand. Depending on the cloth, grind, roast, and pouring technique, it can produce a concentrated cup with substantial body and more suspended material than a typical paper-filter brew.
Its exact emergence in Japan is not securely documented to 1910. Cloth filtration was already part of international coffee practice, while Japanese coffeehouses had appeared before that date: Tokyo’s short-lived Kahiichakan opened in 1888. Coffee culture expanded more visibly in the early twentieth century, including through Brazilian coffee promotion and the opening of Café Paulista in 1911. Over subsequent decades, kissaten—independent cafés serving coffee alongside toast, sandwiches, sweets, or light meals—became established features of Japanese urban life. Nel drip grew into one of their characteristic methods, particularly among proprietors who emphasized careful service and house-specific flavor.
There is no single historical nel recipe. A common approach uses a relatively generous dose of medium-coarse, often dark-roasted coffee. The cloth is warmed, the grounds are gently wetted, and water is added slowly, sometimes chiefly near the center rather than in broad circles. Lower water temperatures and prolonged pours occur in some kissaten traditions, but they are not universal rules. The finished drink may be served black or with sugar and milk. Maintaining the filter is part of the technique: residual grounds must be removed, and the cloth kept clean and moist or otherwise stored to prevent drying, rancidity, and unwanted odors. Practices differ between shops.
Nel drip mattered culturally because it turned an imported tropical commodity into a distinctly localized form of service. Japan grew little coffee domestically; beans arrived through global trading networks linking producing regions in Latin America, Asia, and Africa with industrial ports and urban consumers. Inside the kissaten, however, coffee preparation could be visibly individual rather than standardized. The slow pour, counter service, specialized cups, and proprietor’s practiced movements helped make the drink an experience as well as a stimulant.
Paper filters, electric brewers, soluble coffee, and espresso machines later made coffee faster and more consistent. Nel brewing survived as a specialized practice, and modern specialty cafés have selectively revived it. Contemporary versions may use lighter roasts or different pouring theories, so they should not all be treated as unchanged survivals. Its continuing legacy lies less in one fixed recipe than in the idea that filtration material, maintenance, and controlled manual extraction can define the character of a cup.

Historical context
Japan was nearing the end of the Meiji era, with a population of roughly 50 million and rapidly growing cities connected by railways, steamship routes, telegraph lines, and expanding electrical networks. Tokyo was being remade as an imperial capital and industrial metropolis. Coffee remained an imported commodity rather than an everyday national drink, but cafés offered urban consumers a conspicuously modern social space. Brazil had become the world’s dominant coffee producer, and Japanese migration to Brazil after 1908 would deepen commercial and cultural ties between the two countries.
