Sesame oil is the fat expressed from the seeds of Sesamum indicum, an oil-rich crop well suited to warm growing seasons. Archaeobotanical finds establish sesame cultivation in the greater Indus region during the third millennium BCE, with some evidence potentially earlier. Seeds, however, demonstrate the presence of the crop rather than oil extraction itself. Bronze Age sesame oil is therefore a reasonable reconstruction based on the seed’s composition, later textual evidence and known methods of extracting plant fats, not a directly observed recipe.

After harvest, sesame capsules had to be dried and handled carefully because mature pods can split and scatter their seeds. Cleaning removed grit and plant debris. The seeds could then be pounded or ground, possibly with gentle warming and the addition of water, before pressure or settling separated oil from the crushed mass. Exact Indus procedures are unknown: no surviving installation can be assigned unambiguously to sesame pressing at the stated date. The remaining seed cake would still have contained useful nutrients and may have been eaten or fed to animals, although that use is also inferential for this period.

Oil concentrated considerable food energy into a portable form. It could enrich cereal or pulse dishes, help foods cook against a hot vessel, and carry flavors. Plant oil could also serve nonculinary purposes, including illumination and body care, making it both food and a versatile commodity. Sesame’s tolerance of heat and comparatively dry conditions broadened the range of crops capable of supplying fat, though yields still depended on timely moisture and labor-intensive harvesting.

Sesame later became securely established in Southwest Asian written and agricultural traditions, but the timing of its westward movement is debated. Some proposed late-third-millennium Mesopotamian references and seed identifications are uncertain; clearer textual evidence belongs largely to the second millennium BCE. Consequently, a precise trade route from an Indus center to the Near East cannot be reconstructed from present evidence.

Modern sesame oils preserve the basic principle of separating fat from cleaned seed, but machinery now crushes or expels it efficiently, and commercial oils may be filtered or refined. Pale oil from unroasted seed functions as a cooking fat. Dark, intensely fragrant oil made from roasted seed is especially prominent in Chinese, Korean and Japanese cuisines, generally as a finishing seasoning. That toasted style should not be projected back into the Bronze Age. What links ancient sesame cultivation to the present is the crop and its extractable fat, not one unchanged recipe or culinary tradition.

Historical context

The Indus civilization supported major planned cities such as Harappa and Mohenjo-daro alongside numerous farming and craft settlements. Standardized weights, wheeled transport and river and overland exchange connected communities across hundreds of kilometers, while maritime traffic linked the Indus sphere with Oman and Mesopotamia. Farmers managed winter and summer crops under strongly seasonal rainfall and river conditions. Sesame joined cereals, pulses and other plants in this diverse agricultural economy, but its precise scale and the organization of oil production remain unknown.
