Bucatini all’Amatriciana is a pasta dressed with tomato, rendered guanciale, and grated pecorino, often sharpened with black pepper or chili. It is now closely identified with Roman trattorias, yet its name and strongest origin tradition point to Amatrice, a town in the central Apennines northeast of Rome. Even that summary requires care: the dish did not appear fully formed at a securely documented moment in Rome in 1790, and bucatini is more characteristic of its Roman restaurant life than of every Amatrician version.
Its likely precursor is pasta alla gricia, a tomato-free preparation based on ingredients suited to pastoral travel and storage: dried pasta, cured pork cheek, and hard sheep’s-milk cheese. Guanciale was cut into strips or pieces and heated until its fat rendered; cooked pasta was then combined with the pork, fat, cheese, and pepper. This relationship is historically plausible and widely accepted, although a precise chain of named recipes is difficult to demonstrate.
