Champagne is a sparkling wine made in the Champagne region of northeastern France, but its emergence was a long technological and commercial process rather than a single invention in 1662. The region already produced still wines, often from dark-skinned grapes pressed gently to limit color. Its cool climate created a recurring cellar problem: fermentation could slow or stop in winter, then restart as temperatures rose. The famous 1662 evidence comes not from Champagne but from London. Christopher Merret informed the Royal Society that English wine coopers added sugar or molasses to wine to make it brisk and sparkling. It does not prove that he invented sparkling wine, nor that Champagne producers immediately adopted his procedure. Effervescent wines existed through naturally renewed fermentation, and the precise route by which controlled sparkling production developed in Champagne remains more complicated than a single founding date.
In Champagne, producers gradually learned to manage the bubbles. Stronger bottles, increasingly dependable cork closures, and cellar experience made pressurized wine more practical during the late seventeenth and early eighteenth centuries. Dom Pierre Pérignon, cellar master at the Abbey of Hautvillers from 1668, contributed to blending grapes and improving wine quality. Later legend transformed him into the inventor of Champagne, but the evidence does not support that claim. Early Champagne could vary widely in sweetness, clarity, pressure, and color; the standardized pale, sparkling product familiar today developed over generations.
Modern traditional-method Champagne begins with a dry base wine, commonly assembled from Chardonnay, Pinot Noir, and Meunier, although other authorized varieties survive. A measured mixture of yeast and sugar is added before bottling. Secondary fermentation produces alcohol and trapped carbon dioxide, after which the wine ages on spent yeast, acquiring bread, toast, or biscuit-like aromas. Bottles are gradually turned so sediment collects near the neck, which is then removed. A final dosage helps determine whether the finished wine is brut, dry, or sweet.
By the eighteenth and nineteenth centuries, specialist houses, improved transport, glassmaking, and international trade carried Champagne far beyond its vineyards. Producers increasingly controlled sweetness and sediment, while mechanization reduced some labor without eliminating skilled vineyard and cellar work. Champagne became associated with courts, victories, weddings, ship launches, and New Year celebrations. Today its protected regional name distinguishes it from sparkling wines made elsewhere, while bottle fermentation, riddling, disgorgement, and dosage preserve the technological legacy of turning unpredictable renewed fermentation into a controlled and prestigious drink.

Historical context
Louis XIV was beginning his personal rule in France, while the restored monarchy of Charles II governed England. The Royal Society had been founded in London only two years earlier, creating a forum for experimental reports such as Christopher Merret’s paper. Champagne lay close to major routes linking Paris, the Low Countries, and German lands, but wine still traveled mainly in casks because bottled commerce remained restricted and glass was expensive. Europe’s expanding Atlantic trade increased access to colonial sugar, an increasingly important ingredient in deliberate secondary fermentation, even as its production depended heavily on enslaved labor.
