Cultured butter is butter churned from cream that has first been acidified by lactic-acid bacteria. Unlike modern sweet-cream butter, which is commonly made from fresh pasteurized cream, its traditional predecessor began with cream that soured naturally while being stored or accumulated. Souring offered practical advantages in a world without mechanical refrigeration. Cream gathered over several milkings could not remain perfectly fresh, and acidification suppressed some undesirable microorganisms, though it did not make careless handling safe. Fermentation also improved churning behavior under some conditions and produced a distinctive flavor. Butter nevertheless remained highly perishable: exposure to warmth, air, light, contaminated water, or dirty equipment could cause rancidity or spoilage.
Industrial dairying changed the product. Centrifugal cream separators, pasteurization, refrigeration, hygienic equipment, and cold distribution favored predictable sweet-cream butter. Modern cultured butter is generally reconstructed deliberately: pasteurized cream receives selected bacterial cultures and ripens under controlled conditions before churning. It is now associated especially with premium European-style butter, pastry, sauces, and table service. The continuity lies in acidified cream and its flavor; the major change is microbial control. What was once partly an adaptation to unavoidable souring has become a managed fermentation chosen for taste.

Historical context
Paris was a major European city of roughly a few hundred thousand inhabitants, supplied by farms, markets, and river traffic extending far beyond its walls.
