In 1911, Procter & Gamble introduced Crisco, a branded shortening produced in Cincinnati from hydrogenated vegetable oil. The original product relied chiefly on cottonseed oil, a major by-product of the expanding American cotton industry. Hydrogenation allowed a liquid oil to be converted into a firmer, more oxidation-resistant fat suitable for baking and frying. The name suggested “crystallized cottonseed oil,” although the precise industrial process and formulation were proprietary.

Shortening was not a finished dish but a cooking ingredient designed to replace or supplement lard and butter. Its name came from its ability to “shorten” dough: fat coats flour particles and limits gluten development, producing tender, crumbly pastry. Cooks used the new product in pie crusts, biscuits, cakes, frostings, fried foods, and other recipes requiring a neutral, workable fat. Unlike butter, it contained almost no water and contributed little dairy flavor. Compared with household-rendered lard, it offered standardized texture, mild odor, branded packaging, and relatively dependable storage.

Its preparation depended on industrial chemistry rather than the farm or home dairy. Purified oil was exposed to hydrogen in the presence of a metal catalyst under controlled heat and pressure. Hydrogen added to some of the oil’s unsaturated bonds, raising its melting point and producing a semisolid fat. Manufacturers then controlled cooling and crystallization to obtain a smooth consistency. Early promotional campaigns, including recipe booklets, demonstrations, and claims of cleanliness and digestibility, taught consumers how to substitute shortening for familiar animal fats. Such claims are evidence of marketing strategy, not proof that the product was nutritionally superior.

Hydrogenated shortening became part of a wider transformation in which oilseeds, factories, packaged brands, and national distribution supplied fats with predictable performance. It aided standardized commercial baking and helped make fried and shelf-stable processed foods easier to manufacture. Later products used soybean and other oils as the American edible-oil economy changed.

The health significance emerged much later. Partial hydrogenation can create trans fatty acids, and substantial evidence eventually associated industrial trans-fat intake with increased cardiovascular risk. Regulatory action and changing consumer demand led manufacturers to remove partially hydrogenated oils from many foods. Modern shortenings may instead combine naturally solid fats, fully hydrogenated oils, and interesterified oils; formulations vary by market and date. Consequently, present-day shortening is not chemically identical to the 1911 product. Its legacy is double-edged: it helped make baking fats inexpensive, uniform, and widely available, while also illustrating how an industrial ingredient can spread decades before its long-term health effects are adequately understood.

Historical context

The United States had roughly 94 million residents and was becoming an urban, mass-consumer society. Rail networks, national magazines, branded packaging, and chain distribution allowed a Cincinnati manufacturer to promote one standardized cooking fat across distant markets. Cotton cultivation generated large quantities of seed once treated largely as a by-product, while advances in refining and catalytic hydrogenation turned vegetable oils into commercially valuable foods. Domestic kitchens still relied heavily on butter and rendered animal fats, but industrially processed margarine, canned foods, breakfast cereals, and packaged ingredients were rapidly expanding.
