Bakery practices and the repeated transfer of mature starter can shape a microbial community, but flour, temperature, feeding schedules, and fermentation conditions matter alongside geography. The city’s sourdough identity is better understood as a combination of biological fermentation and cultural continuity.
As California wheat production expanded, commercial bakeries could operate at greater scale. Mechanization eventually replaced some hand mixing and shaping, while controlled proofing and commercial distribution made output more consistent. Some twentieth-century products shortened fermentation or added acid to imitate sourness; artisan revivals instead emphasized long fermentation, starter lineage, and hand-shaped loaves. Claims that a starter has remained biologically unchanged since the Gold Rush are difficult to verify because living cultures continually evolve.
