Reconstruction
Georgian wine is not one fixed beverage but a family of wines produced from numerous local grape varieties by both earthenware and conventional cellar methods. Its deepest archaeological association comes from early farming settlements south of present-day Tbilisi. Pottery dating approximately to 6000–5800 BCE has yielded chemical compounds interpreted together as evidence that the vessels once contained grape wine. This is strong evidence for very early vinification in the South Caucasus, although residues alone cannot establish the wine’s flavor, color, strength, or social use.
The earliest drink was probably made by crushing ripe grapes and allowing naturally occurring yeasts to ferment their sugars. Archaeology does not show that cultured yeast was added, nor does it prove that Neolithic jars were used exactly like modern qvevri. The region lies within the natural range of wild Eurasian grapevine, but wine residue by itself cannot determine whether particular grapes were cultivated, domesticated, or gathered wild. Large pottery vessels nevertheless gave farming communities a practical container for fermentation and storage.
Later Georgian practice developed a distinctive qvevri method. A qvevri is a large, egg-shaped earthenware vessel commonly buried for stability and temperature moderation. Grapes are crushed, and the juice may ferment with skins, seeds, and sometimes stems. After fermentation, the vessel is sealed while solids settle and the wine matures; clearer wine is then removed. Contact with skins can give white grapes amber color, tannin, and a markedly different texture from most modern European-style white wines. Details vary by region, grape, household, and producer.
Wine became deeply embedded in Georgian hospitality and identity. At the supra, or formal feast, food and wine accompany an ordered sequence of toasts directed by a tamada. Such customs are historically documented, but they should not be projected unchanged into the Neolithic. Nor can an uninterrupted eight-thousand-year chain of practice be demonstrated simply because wine was made in the same broad region at widely separated dates.
Today Georgia produces qvevri wines alongside wines fermented in stainless steel, concrete, or wooden barrels. Temperature control, selected yeasts, laboratory testing, filtration, and commercial bottling have expanded consistency and export reach, while some producers emphasize low-intervention fermentation and indigenous grape varieties such as Rkatsiteli and Saperavi. The ancient residues matter because they place grape fermentation among the experiments of some of the region’s earliest farmers. Modern Georgian wine draws cultural power from that antiquity, but its present forms result from millennia of changing grapes, vessels, trade, tastes, and technology.

Historical context
Early farming villages occupied parts of the South Caucasus, where households cultivated cereals and legumes, kept livestock, and used pottery for cooking and storage. Communities were small, and there were no cities, states, writing systems, or coined money. Obsidian and other materials nevertheless moved across substantial regional distances, showing that villages were not isolated. The warm early Holocene environment supported wild grapevines in suitable woodland and river-valley habitats. In Mesopotamia, fully urban societies still lay several millennia in the future, while agriculture was continuing to spread through southeastern Europe.
