Qvevri Rkatsiteli is an amber wine made by fermenting white Rkatsiteli grapes in a large earthenware vessel, usually buried so that its opening remains accessible from the cellar floor. Its defining modern form is especially associated with Kakheti in eastern Georgia. The wine is commonly described as “amber” rather than white because prolonged contact with grape skins and other solids extracts color, tannin, aroma, and flavor.
Georgia possesses exceptionally early evidence for grape wine, but that evidence must be separated from the history of this particular drink. Neolithic pottery from settlements in eastern Georgia, dating approximately to 6000–5800 BCE, has yielded chemical signals interpreted as grape wine. Those finds demonstrate early grape processing and fermentation in ceramic containers. They do not identify the Rkatsiteli variety, establish that the vessels were buried qvevri in the later sense, or document the complete Kakhetian method. The emergence date of named Rkatsiteli and the antiquity of its precise treatment therefore remain uncertain.
In established qvevri production, harvested grapes are crushed and the juice enters a cleaned clay vessel. Kakhetian practice may include skins, seeds, and stems, although proportions differ among producers and vintages. Fermentation can begin through yeasts naturally present on grapes and in the winery, while the floating cap is managed during active fermentation. Afterward, the solids settle into the vessel’s tapering bottom. The qvevri is sealed, and the wine may mature for several months before being removed and transferred. Burial helps buffer temperature changes; the vessel’s shape also assists settling, but neither feature eliminates the need for careful cleaning and sound cellar practice.
The resulting wine can be dry, structured, and markedly tannic, with aromas that vary by fruit, vintage, vessel, and handling. It is served as wine rather than eaten as a solid dish, often accompanying the shared meals and toasts central to Georgian hospitality. Not every Georgian qvevri wine follows the same method: western Georgian traditions may use less solid material and shorter contact, while modern producers may control temperature, select yeasts, limit stems, or adjust maturation.
During the twentieth century, industrial winemaking and Soviet production favored standardized methods alongside continuing household practice. Since the late twentieth and early twenty-first centuries, Georgian producers and international natural-wine communities have renewed interest in qvevri fermentation. Modern Qvevri Rkatsiteli is therefore best understood as a living regional wine grounded in old clay-vessel knowledge, while claims that the named variety and current recipe have continued unchanged for eight thousand years exceed the available evidence.

Historical context
Early farming communities of the South Caucasus lived in small settlements of mudbrick or packed-earth buildings and cultivated cereals, pulses, and other plants while keeping domesticated animals. Pottery had become important for cooking, storage, and fermentation. Chemical evidence from Neolithic vessels in what is now Georgia indicates grape wine by roughly 6000–5800 BCE, among the earliest secure evidence known, although settlements, grape management, and ceramic forms varied across the region. Long-distance exchange already moved materials such as obsidian between communities, but there were no cities, states, or written records here to name grape varieties or describe recipes.
