In 1996, investigators isolated a highly pathogenic H5N1 influenza A virus from a sick farmed goose in Guangdong. The immediate event was a veterinary finding rather than a documented food shortage. Domestic geese were part of a dense southern Chinese poultry economy that also included chickens and ducks moving among farms, traders, live-bird markets, slaughter points, restaurants, and households. Consumers ate poultry fresh, roasted, braised, steamed, or incorporated into soups and festival meals. Cantonese roast goose was especially prominent in regional restaurant culture. There is insufficient evidence that the 1996 isolation alone changed these dishes or caused widespread avoidance of goose meat.

Its food-system significance became clearer in 1997, when closely related H5N1 viruses caused severe disease in Hong Kong poultry and infected humans. Eighteen recognized human cases, including six deaths, were followed by the destruction of roughly 1.5 million chickens and other poultry at the end of that year. The intervention interrupted supplies, eliminated valuable flocks, and imposed heavy losses on farmers, wholesalers, market vendors, transporters, and slaughter workers. Consumers temporarily lost access to portions of the fresh-poultry trade; frozen or imported meat could substitute for some demand, but it did not reproduce the cultural preference for birds selected alive and slaughtered near the point of sale.

Its legacy lies in the uneasy accommodation between disease control and established food practices. Modern poultry systems still rely on biosecurity, rapid reporting, vaccination in some jurisdictions, and restrictions on trade or live-market activity. These measures protect animal and public health, but repeated culls and closures continue to concentrate economic harm among small producers and market workers.
