Pear juice is the liquid expressed from ripe pears, usually after the fruit has been crushed into a wet pulp. Its flavor depends heavily on cultivar and ripeness: dessert pears can yield a sweet, aromatic drink with little acidity, while traditional orchard varieties may be more tannic or sharp. Freshly pressed juice is normally cloudy because it contains suspended fruit particles. Straining removes coarse material, whereas prolonged settling or later filtration produces a clearer drink.

No single medieval invention or documented founder can be assigned to pear juice. At harvest, sound ripe pears could be sorted, crushed with wooden implements, and squeezed through cloth or under a simple press. The juice would have been consumed promptly, because its sugars support rapid microbial growth and fermentation. Without modern sanitation, pasteurization, refrigeration, or airtight packaging, it could become sour, develop alcohol, or spoil. Fermented pear drink—now generally called perry in English—was one possible outcome, whether intended or accidental. Boiling could extend keeping time but would change the fresh aroma and required fuel; evidence for this treatment in the specific setting is uncertain.

Its continuity with medieval practice lies in the elementary use of pressure on ripe fruit; claims for an unbroken regional beverage tradition require evidence not supplied by the simple plausibility of the technique.

Historical context

Central Europe was a predominantly rural landscape of fields, pasture, woodland, vineyards, and small orchards. Zurich was a regional settlement within the Holy Roman Empire rather than a modern-sized city. Religious houses and landed estates helped organize agriculture, storage, milling, and trade. Grapes and apples already demonstrated the usefulness of crushing and pressing fruit, but fresh unfermented juice remained highly seasonal because glass bottling, controlled pasteurization, mechanical refrigeration, and modern microbiology lay centuries ahead.
