Corn oil is a product of industrial maize processing rather than an inherited household oil. Although Indigenous American societies had cultivated and transformed maize for millennia, maize germ contains a relatively modest proportion of oil, and separating enough germ by hand would have been laborious. The oil became commercially practical when mechanized wet milling processed maize on a large scale and isolated germ as one fraction of the kernel. Commercial corn oil existed before 1911, but that year is especially associated with the American introduction of Mazola as a branded cooking and salad oil, not with the first extraction of oil from maize.

Wet milling begins by steeping maize in water under controlled conditions, after which grinding releases the germ without reducing the entire kernel to flour. Differences in density allow machinery to separate germ from starch, fiber, and protein. Early commercial production relied substantially on pressing. Later plants commonly combined pressing with solvent extraction to recover more oil. Crude corn oil contains phospholipids, free fatty acids, pigments, waxes, odors, and other compounds. Degumming, alkali refining or comparable neutralization, bleaching, winterization where needed, and deodorization produce a clear, stable, mild-tasting oil. Exact processing sequences have varied by factory and period.

That neutrality was commercially valuable. Corn oil could dress salads, fry foods, enter mayonnaise, and serve as an ingredient in shortening, margarine, baked goods, and processed foods without imposing a strong flavor. It also converted germ, once a troublesome or lower-value milling fraction, into a profitable commodity alongside starches, sweeteners, animal feeds, and fermentation products. Its history therefore belongs to the integrated maize refinery, where the economic value of the kernel came from dividing it into specialized industrial ingredients.

Marketing presented refined corn oil as clean, modern, digestible, and convenient. Such claims helped liquid vegetable oils compete with lard, butter, and other established fats, although individual adoption differed by region, income, cuisine, and price. Corn oil later became one of several interchangeable refined oils in international food manufacturing. Sunflower, soybean, rapeseed-derived canola, and other oils could replace it when crop prices or nutritional preferences changed.

Modern corn oil remains rich in unsaturated fat, particularly linoleic acid, and naturally contains vitamin E, though amounts vary with refining and storage. It is energy-dense like every culinary oil. Its larger significance lies in the food system that made it possible: enormous maize harvests, centralized fractionation, chemical and physical refining, branded retail packaging, and markets capable of turning nearly every part of a grain into a separate product. Corn oil made maize less visible even as it placed the crop more deeply inside modern diets.

Historical context

The United States had about 92 million residents, and roughly 46% lived in urban places. Railways connected Midwestern maize-growing districts to large milling, manufacturing, and consumer markets, while national brands increasingly sold standardized packaged foods. The federal Pure Food and Drugs Act had taken effect only a few years earlier, and 1911 also saw the introduction of a widely marketed hydrogenated vegetable shortening. Industrial wet milling was already separating maize into starch, protein, fiber, germ, and other saleable fractions, making refined germ oil economically feasible in a way household maize processing was not.
