High-fructose corn syrup, usually abbreviated HFCS, is not pure fructose and is better understood as an industrial sweetening ingredient than as a dish. It begins with corn starch, most often produced by wet milling. Acids or enzymes hydrolyze the starch’s long carbohydrate chains into glucose. A second enzyme, glucose isomerase, converts some of that glucose into fructose, which tastes sweeter. Commercial production associated with Clinton, Iowa, began in the late 1960s, although the product’s large-scale influence belongs mainly to the following decades.
Early commercial syrup typically contained about 42 percent fructose among its component sugars and became known as HFCS-42. It was suitable for baked goods, processed foods, sauces, and preserves. Producing HFCS-55, the grade widely used in soft drinks, required an additional fractionation step: manufacturers enriched part of the syrup in fructose and blended it back with HFCS-42. The numbers 42 and 55 describe the approximate fructose share of the syrup’s sugars, not the percentage of the entire liquid, which also contains substantial water.
Several conditions favored adoption. The United States possessed a highly mechanized corn industry capable of delivering enormous quantities of starch. Liquid HFCS could be pumped, transported in bulk, and incorporated consistently into factory recipes. Changes in sugar prices and US sugar policy also made corn-derived sweeteners economically attractive. During the 1970s and 1980s, HFCS increasingly replaced some cane and beet sugar in American manufactured foods, especially carbonated beverages. Adoption varied by country because crop supplies, trade rules, consumer preferences, and sugar industries differed.
HFCS is nutritionally close to sucrose. Ordinary table sugar is digested into approximately equal parts glucose and fructose; HFCS-55 already contains those free sugars in a roughly comparable ratio. Evidence does not support treating HFCS as uniquely harmful at equal doses solely because of its name or composition. The more defensible concern is systemic: inexpensive liquid sweetener helped manufacturers produce and market heavily sweetened drinks and foods at great scale. High intake of added sugars, particularly through beverages that provide little satiety, is associated with dental caries, excess energy consumption, weight gain, and metabolic disease risk.
Today, HFCS remains common in the United States, while sucrose or other sweeteners dominate many markets elsewhere. Some manufacturers have returned to cane sugar in response to consumer perceptions, not because cane sugar is nutritionally harmless. HFCS’s lasting importance is technological and economic: enzymatic processing converted an abundant grain starch into a standardized sweetener, tightening the connection between industrial corn agriculture, commodity policy, and ultra-processed food.

Historical context
The world population was about 3.5 billion, and the United States was experiencing rapid growth in supermarkets, packaged foods, interstate distribution, and television advertising. Hybrid maize, synthetic fertilizer, pesticides, combines, and tractors had made the Corn Belt exceptionally productive. Cane and beet sugar still dominated the US sweetener market, while enzyme engineering was beginning to let processors transform abundant starch into standardized ingredients on an industrial scale.
