Japanese shōyu is a salty, aromatic seasoning produced by fermenting soybeans and, in its most widespread form, wheat. Its history is entangled with older East Asian traditions of fermented pastes and sauces, including Chinese jiang and jiangyou, as well as Japanese hishio and miso. A frequently repeated Japanese account assigns a decisive moment to 1254: the Zen monk Kakushin supposedly returned from Song China and taught the preparation of a fermented paste at Yuasa, where liquid collecting from the mash was recognized as a useful condiment. The association is culturally important, but later tradition—not secure contemporary documentation—supports the exact date and discovery narrative.

A tamari-like liquid could indeed drain or be drawn from soybean miso, making the account technically plausible. Yet such liquid should not automatically be equated with modern koikuchi shōyu. Tamari generally contains mostly soybeans and little or no wheat, whereas standard Japanese shōyu evolved into a deliberately brewed sauce in which soybeans and roasted, crushed wheat commonly provide the fermentation substrate. Producers inoculate this mixture with kōji molds, traditionally strains of Aspergillus used safely in Japanese food production. After kōji develops, it is mixed with salt water to form moromi, a mash fermented and matured by interacting molds, yeasts, and lactic-acid bacteria. The mature mash is pressed; the liquid is then clarified and usually heated, stabilizing it while developing aroma and color.

Clear evidence for organized shōyu manufacture becomes much stronger in the early modern period. Brewing centers developed regional styles, while expanding towns and commercial distribution encouraged specialization. Koikuchi, the dark, balanced style now dominant in much of Japan, became especially associated with the Kantō region. Usukuchi, prominent around Kansai, is lighter in color but not necessarily lower in salt. Tamari remained important in central Japan, and other forms—including pale shiro shōyu and twice-brewed saishikomi—illustrate how ingredient ratios and brewing choices produced distinct results.

Shōyu was eaten in small quantities rather than as a staple. It seasoned simmered vegetables, fish, tofu, soups, pickles, and rice dishes; later, it became indispensable to preparations such as dipping sauces and tare. Its glutamates, fermentation products, salt, and aroma compounds intensify savoriness while helping a modest amount flavor otherwise plain staples.

Modern production ranges from long-aged, traditionally brewed sauces to faster industrial products, although genuine fermented shōyu remains widely available. Pasteurization, filtration, controlled starter cultures, bottling, and global transport have made flavor more consistent and distribution far broader. Reduced-sodium versions address the condiment’s principal nutritional drawback: ordinary shōyu is extremely rich in sodium. The defensible legacy of the medieval story is therefore not a single documented invention, but the gradual transformation of fermented soybean knowledge into one of Japan’s most influential seasonings.

Historical context

Japan was governed through the Kamakura shogunate while the imperial court remained at Kyoto. Maritime contact with Song China carried monks, texts, ceramics, medicines, and food knowledge across the East China Sea. Zen institutions were expanding, and monasteries could serve as centers for literate exchange and specialized food preparation. Soybeans, rice, barley, wheat, salt, fermented pastes, and preserved foods were already familiar, but the large commercial shōyu-brewing industry documented in later centuries had not yet emerged.
