Reconstruction
Japanese shōyu is a clear, pressed seasoning produced by fermenting soybeans—usually with wheat—in salt brine. Its flavor combines salinity with amino-acid-rich savor, mild acidity, sweetness, and volatile aromas created during fermentation and heating. Although 1597 is important as an early surviving appearance of the word shōyu in a Japanese reference work, it is not a securely documented invention date. Japanese cooks already knew older salted ferments called hishio, while liquid collected from soybean pastes provided another route toward sauce-like seasonings.
Shōyu belongs to a wider East Asian history of fermented soybean pastes and liquids, including Chinese jiang and jiangyou and Korean jang and ganjang. How particular techniques moved among these traditions is not completely documented. A frequently repeated Japanese account connects an early soy seasoning with the transmission of Kinzanji-style miso and the town of Yuasa, but the details function partly as later origin tradition rather than firmly dated proof of a single invention. Wheat-rich Japanese sauce became increasingly distinct during the early modern period, with regional methods producing different balances of color, sweetness, aroma, and soybean character.
In the common brewing process, soybeans are soaked and steamed, while wheat is roasted and cracked. The two are combined and inoculated with Aspergillus molds to make kōji. Mold enzymes begin breaking proteins into amino acids and starches into sugars. Brewers mix the kōji with brine to form moromi, a thick mash in which salt-tolerant yeasts and lactic-acid bacteria participate over several months or longer. The mature mash is pressed; the liquid is clarified and commonly heated, both to stabilize it and to develop aroma. Historical timing, microbial control, and heating practices varied, so a modern six-to-eight-month recipe should not be treated as universal.
Expansion accelerated under the Tokugawa shogunate. Noda and Chōshi, connected by waterways to Edo, became major brewing centers serving one of the world’s largest cities. Koikuchi, the dark all-purpose style now dominant nationally, suited the developing food culture of the Kantō region. Shōyu became integral to dipping sauces and broths associated with soba, sushi, grilled foods, and other urban dishes. Elsewhere, usukuchi, tamari, pale shiro shōyu, and twice-brewed saishikomi retained different culinary roles.
Modern factories introduced selected starter cultures, temperature control, mechanical pressing, pasteurization, and standardized bottling. Some inexpensive products have also incorporated chemically hydrolyzed vegetable protein, though traditionally brewed shōyu remains commercially important. Global Japanese migration, restaurant culture, and international food manufacturing carried soy sauce far beyond Japan. Today it is both a regional family of ferments and a mass-market seasoning, with its historical dependence on microbial transformation still visible in contemporary brewing.

Historical context
Toyotomi Hideyoshi had nearly completed Japan’s political unification, although his costly invasions of Korea were still under way. Castle towns and commercial networks were expanding, and Edo would become the Tokugawa seat in 1603. Soybeans, wheat, rice, salt making, kōji fermentation, and fermented pastes were already well established. Maritime trade connected Japan with China, Korea, Southeast Asia, and Portuguese merchants, while growing cities created increasingly large markets for durable, transportable seasonings.
